Praline Sweet Potatoes

Preheat an oven to 400 degrees F
- For the Sauce:
- 5 Large Sweet Potatoes
- 1 Cup Pecan Pieces, toasted until fragrant
- 1/2 Cup Bourbon
- 1/4 Cup Water
- 3/4 Cup Brown Sugar
- 1/2 Cup Steen’s Cane Syrup
- 1 Tbsp Orange Zest
- 1/2 Tsp Cinnamon
- 1/4 Tsp Freshly Grated Nutmeg
- 1 Tsp Kosher Salt
- A Few Turns of Freshly Ground Black Pepper
- 1/2 Tsp Toasted Sesame Oil
- 1 1/2 Sticks Unsalted Butter
- 1 Cup Pecan Pieces, toasted until fragrant

Preheat a Panini press. Combine the mayonnaise and balsamic vinegar in a small bowl
- 1/2 cup mayonnaise
- 3 tablespoons balsamic vinegar
- 8 slices sandwich bread
- Butter
- 1/2 lb sliced deli turkey
- 1/2 lb sliced deli ham
- 8 slices of provolone cheese
- Pepperoncini

Cream butter and sugar with mixer until fluffy
- 1 cup butter or two sticks or 16 tablespoons ( I use sweet cream butter that is unsalted)
- 2 cups white granulated sugar
- 4 eggs
- 3 cups sifted all-purpose flour or you can use cake flour, too. (Sift the flour first and then measure 3 cups. If using cake flour, sift it, too.)
- 1 teaspoon salt
- 3 teaspoons baking powder
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract

- Mojo Marinated Pork:
- 2 thin slices baked leg ham
- 4 large, thin slices Mojo Marinated Pork (recipe follows)
- 2 pieces of white baguettes, 6 inch/15 cm in length, cut in half
- Melted butter, for brushing
- American mustard
- 2 thin slices Swiss cheese
- 2 or 3 dill pickles, thinly sliced
- 2/3 cup (160 mL) extra-virgin olive oil
- 1-1/2 tbsp (22 mL) finely grated orange zest
- 1/2 cup (125 mL) fresh squeezed orange juice
- 1/2 cup (125 mL) fresh lime juice
- 7 cloves garlic, minced or pressed
- 2/3 cup (160 mL) lightly packed cilantro leaves, chopped
- 1/4 cup (60 mL) lightly packed mint leaves, chopped
- 1 tbsp (15 mL) minced fresh oregano leaves
- 1 tsp (5 mL) ground cumin
