Pumpkin Shaped Cheese Ball

Nacho flavored cheese ball shaped like a pumpkin
- 16 ounces cream cheese
- 1 1/2 cups shredded cheddar
- 3 T. minced onion
- 2 T. salsa
- 2 t. ground cumin
- 1 t. minced jalepeno (optional)
- crushed nacho-flavored tortilla chips
- Bell Pepper stem
Asian Beef with Snow Peas

In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch
- 3 3 3 tablespoons soy sauce
- 2 2 2 tablespoons rice wine
- 1 1 1 tablespoon brown sugar
- 1/2 1/2 1/2 teaspoon cornstarch
- 1 1 1 tablespoon vegetable oil
- 1 1 1 tablespoon minced fresh ginger root
- 1 1 1 tablespoon minced garlic
- 1 1 1 pound beef round steak, cut into thin strips
- 8 8 8 ounces snow peas
Chicken Parm Meatballs

Preheat a grill or grill pan to medium
- 2 pounds ground chicken or turkey breast
- 3/4 cup grated Parmigiano-Reggiano
- 1/2 cup bread crumbs (a couple generous handfuls)
- 1 large egg
- 3 tablespoons tomato paste
- 3 cloves garlic, finely chopped
- Flat-leaf parsley, chopped (a generous handful)
- Fresh basil, chopped or torn (a generous handful)
- Salt and pepper
- 12 bocconcini (mini fresh mozzarella balls)
- 1/2 cup extra-virgin olive oil (EVOO)
- Juice of 1 lemon
- 2 teaspoons anchovy paste
- 1 teaspoon Worcestershire sauce
- 2 hearts romaine lettuce, shredded
- 1 head radicchio, shredded
Pepparkakor (Gingersnaps)

Combine brown sugar, molasses and spices in 1 1/2 quart saucepan
- 2/3 cup light brown sugar
- 2/3 cup light molasses
- 2 t. ground ginger
- 1 t. ground cinnamon
- 1 t. ground cardamon
- 1/2 t. ground cloves
- 12 T. butter, cut up
- 2 eggs
- 5 1/2 cups all purpose flour (approx.)
- 1/2 t. baking soda
Hearty Berry Streusel Muffins

Prepare muffin tins with paper or oil
- 1 cup white flour
- 1/2 cup spelt flour (or add another 1/2 cup white)
- 1 cup whole-wheat flour
- 1 cup oats
- 1 T. baking powder
- 1 t. baking soda
- 1/2 t. sea salt
- 1 cup honey (or raw sugar)
- 1 1/2 cups plain yogurt
- 1 6-oz. container raspberry or blueberry yogurt
- 1/2 cup milk
- 3 T. canola oil
- 2 t. vanilla extract
- 1 large egg
- 1 cup each fresh blueberries and raspberries
- Struesel
- 1/4 cup flour
- 3 T. brown sugar
- 1/4 cup chopped, lightly toasted walnuts, pecans or almonds
- 1 1/2 T, butter, melted
Golden Onion and Thyme Dip

Heat the oil in a large skillet over medium-high heat
- For Dip:
- 2 T. olive oil
- 1 large Spanish or 2 large yellow onions (about 1 lb. total) finely diced
- 8 ounces cream cheese
- 6 T. sour cream
- Pinch of cayenne
- Freshly ground black pepper
- Pita Chips (recipe follows)
- For Chips:
- 2 pita breads (plain and 8" wide)
- 3 T. olive oil

- 1 cup finely shredded Parmesan cheese
- 6 ounces cooked chicken strips
