Cheesy Zucchini Noodles with Bacon

Cut the zucchini into long noodles using a spiralizer (or use 1 pound store-bought zucchini noodles)
- 1 pound zucchini (about 3 medium)
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 2 slices bacon, chopped
- 2 teaspoons unsalted butter
- 2 scallions, thinly sliced (white and green parts separated)
- 1 clove garlic, minced
- 2 teaspoons all-purpose flour
- 2/3 cup milk
- 1/2 teaspoon Dijon mustard
- Pinch of cayenne pepper
- 1/3 cup shredded cheddar cheese
Roasted Salsa

I roasted the tomatoes and peppers on the BBQ pit
- 8 lbs. (approx. 32-40) roma/plum tomatoes
- 2 lbs. peppers (approx. 12 Anaheims plus 4 jalapenos is a good combo of flavor & heat, weigh and adjust quantity to equal 2 lbs.)
- 4 medium onions
- 8 garlic cloves
- 1 cup fresh cilantro leaves
- 1 tablespoon + 1 teaspoon dried Mexican oregano (or regular oregano)
- 2 tablespoons ground cumin
- 2 tablespoons + 2 teaspoons kosher salt
- 2 tablespoons + 2 teaspoons ground black pepper
- 1 cup bottled lime juice (for canning safety, don't use fresh)
- 1 cup cider vinegar (or substitute additional bottled lime/lemon juice for vinegar)
- 1 cup water
- crushed red pepper flakes, optional (add to taste for a hotter salsa)

Panera Bread Broccoli Cheese Soup

Saute onion in butter. Set aside
- 1 T. butter, melted
- 1/2 medium onion, chopped
- 1/4 cup melted butter
- 1/4 cup flour
- 2 cups half and half
- 2 cups chicken stock
- 1/2 pound fresh broccoli
- 1 cup carrots, julienned
- salt and pepper to taste
- 1/4 t. nutmeg
- 8 ounces grated sharp cheddar cheese
Raspberry Sour-Cream Muffins

Preheat oven to 375 degrees
- 1 cup (2 sticks) unsalted butter
- 1 cup sugar
- 2 eggs
- 2 cups plus 2 T. flour
- 2 t. baking powder
- 1 t. baking soda
- 1/4 t. salt
- 1 t. vanilla
- 1 cup sour cream
- 1 1/4 cup fresh or frozen raspberries
- Raw sugar
Fire Roasted Salsa

I used this recipe but eliminated jalapenos
- 5 pounds tomatoes
- 3 poblano peppers
- 2 jalapeños, finely chopped ~ wear gloves!
- 1 large white onion, chopped, 1½ cups
- 3 garlic cloves, finely chopped
- 1 cup apple cider vinegar
- ½ cup chopped cilantro
- 2 teaspoons dried oregano
- ½ teaspoon cumin
- 2 teaspoons kosher salt
- 1 - 2 tablespoons sugar

Preheat oven to 350°. Place a greased 9-in
- 2 tubes (8 ounces each) refrigerated crescent rolls, divided
- 1 teaspoon olive oil
- 1 package (6 ounces) fresh baby spinach
- 1 cup sliced fresh mushrooms
- 7 large eggs
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 1/8 teaspoon pepper
- 1/2 pound thinly sliced deli ham
- 1/2 pound thinly sliced hard salami
- 1/2 pound sliced provolone cheese
- 2 jars (12 ounces each) roasted sweet red peppers, drained, sliced and patted dry

- 1 T. yellow mustard
