Sausage & White Bean Stew

This healthy and hearty sausage & white bean stew improves in flavor when allowed to rest for 30 minutes or longer ...
- 1 pound great Northern beans, picked through*, soaked overnight in water, drained, and rinsed
- 8 to 9 cups homemade chicken stock, unsalted chicken stock, or reduced-sodium chicken broth
- Kosher salt and freshly ground black pepper, to taste
- 3 tablespoons plus 1 teaspoon extra-virgin olive oil
- 2 cups onions, diced (2 medium)
- 1/2 cup celery, diced (3 stalks)
- 1/2 cup carrots, peeled and diced
- 1 1/2 teaspoons garlic, finely chopped (about 3 cloves); any green shoot removed before chopping
- 1/4 teaspoon dried thyme, crushed
- 1 (14.5-ounce) can whole peeled tomatoes, drained and crushed
- 1 bunch black kale or kale, washed and stemmed (about 8 cups)
- 1 pound smoked sausage, such as kielbasa or andouille, cut in 1/2-inch slices
Old Fashioned Biscuits

Combine the dry ingredients: Preheat the oven to 425 degrees F
- 2 cups all-purpose flour, plus more for dusting
- 1 teaspoon sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 8 tablespoons cold lard (or unsalted butter)
- 1/2 cup whole milk
- Unsalted butter, softened, for the pan and biscuit tops
Avacado Salsa

Combine corn, olives, red pepper and onion
- 1-2/3 cups (about 8-1/4 ounces) frozen corn, thawed
- 2 cans (2-1/4 ounces each) sliced ripe olives, drained
- 1 medium sweet red pepper, chopped
- 1 small onion, chopped
- 5 garlic cloves, minced
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 3 tablespoons cider vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 medium ripe avocados, peeled
- Tortilla chips
Old Fashioned Crockpot Smothered Pork Chops

1. Heat oil and butter in a large skillet over medium high heat
- Garnish:
- 4 Smithfield pork chops (preferably bone in)
- 1 tablespoon vegetable oil
- 2 tablespoons butter
- Salt and pepper
- Flour for dredging
- 4 potatoes, sliced with skin
- 1 large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 (10.75 oz.) cream of mushroom soup
- 1 packet onion gravy mix
- 2 cups beef broth
- 1 teaspoon dried leaf thyme
- 4 tablespoons tablespoons parsley, chopped

- 1 medium white onion
- 1 ⁄2 cup sugar
- 1 cup white vinegar

Bacon-Wrapped Pork Medallions

- 8 slices bacon
- 1 tablespoon garlic powder
- 1 teaspoon seasoned salt
- 1 teaspoon dried basil

- 2 pounds pork tenderloin

Collard Greens with Ham

- 1/4 pound country ham, diced
- 1 shallot, finely diced
- 3 to 4 bunches (2 to 3 pounds) collard greens

- 1 1/3 cups blanched hazelnuts
- 1 1/2 cups plus 1/3 cup sugar
- 1 tablespoon kosher potato starch
- 6 large egg whites
- 1/4 teaspoon salt
- 1/4 cup whole milk
- 5 cups heavy cream
- 8 ounces bittersweet chocolate, coarsely chopped, plus shaved chocolate for topping
- 1 tablespoon instant espresso powder
Queso - Beef Stuffed Poblano Peppers
