Chocolate Cream Pie

The filling of this chocolate-crust pie is luscious, but not too rich
- 1 1/3 cups all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 4 1/2 teaspoons granulated sugar
- 1/4 teaspoon salt
- 1/2 cup shortening, chilled and cut up
- 3 to 4 tablespoons ice water
- 1 cup semisweet chocolate, chopped (6-ounces)
- 2 tablespoons butter
- 3 cups whole milk
- 2/3 cup granulated sugar
- 4 egg yolks
- 3 tablespoons cornstarch
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla
- 3/4 cup whipping cream
- 2 tablespoons sour cream
- 1 tablespoon powdered sugar
- Chocolate curls or grated semisweet chocolate
Sweet Chicken Bacon Wraps

Preheat oven to 350 degrees
- 1 1/4 pounds boneless, skinless, chicken breasts (about 4)
- 1 (1 pound) package sliced bacon
- 3/4 cup firmly packed brown sugar
- 2 T. chili powder
Buttermilk Fried Chicken

Cut each chicken into 10 pieces
- For Dredging and Frying:
- Two 2 1/2 to 3 pound chickens
- Chicken Brine, cold
- 1 quart buttermilk
- Kosher salt and freshly ground pepper
- Coating:
- 6 cups all purpose flour
- 1/4 cup garlic powder
- 1/4 cup onion powder
- 1 T. plus 1 t. paprika
- 1 T. plus 1 t. cayenne
- 1 T. plus 1 t. kosher salt
- 1 t. freshly ground pepper
- Ground fine sea salt
Stacked Enchilada Casserole

n a large skillet, saute pepper in oil for 3 minutes
- 2/3 cup chopped green pepper
- 2 teaspoons canola oil
- 1 garlic clove, minced
- 1 cup shredded cooked chicken
- 1 cup canned black beans, rinsed and drained
- 1/3 cup thinly sliced green onions
- 1/2 cup enchilada sauce
- 1/2 cup picante sauce
- 4 corn tortillas (6 inches)
- 1 cup shredded cheddar cheese
- Sour cream and shredded lettuce, optional
