Bacon Wrapped Shrimp with Chilpolte BBQ Sauce

Soak the bamboo skewers in water, to keep from burning during grilling
- 8 ounces bacon
- 20 shrimp (21/25 count), shelled, deveined
- 1/2 cup BBQ sauce
- 1/4 cup canola oil
- 3 tablespoons chipotle pepper in adobo
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1/2 teaspoon red chile flakes
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper

- 1 1 1 lb. Velveeta cheese, cut into cubes

- 1 1/2 1 1/2 1/2 1 1/2-inch peppers, 1/2 finely chopped and 1 sliced into 1/2-inch strips
