Italian Sausage Stuffed Zucchini

Preheat oven to 350°. Cut each zucchini lengthwise in half
- Ingredients
- 6 medium zucchini (about 8 ounces each)
- 1 pound Italian turkey sausage links, casings removed
- 2 medium tomatoes, seeded and chopped
- 1 cup panko (Japanese) bread crumbs
- 1/3 cup grated Parmesan cheese
- 1/3 cup minced fresh parsley
- 2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
- 2 tablespoons minced fresh basil or 2 teaspoons dried basil
- 1/4 teaspoon pepper
- 3/4 cup shredded part-skim mozzarella cheese
Mini Grilled Cheese Sandwiches

Sauce mushrooms in a frying pan over med-high heat
- Toppings:
- 1 long French baguette; thinly sliced
- 1 cup grated aged cheddar cheese
- 3-4 tbsp butter
- Sliced sautéed mushrooms
- Sliced sundried tomatoes
- Arugula
- Fresh basil leaves (optional)
- Red chili flakes
- Cracked black pepper and sea salt

Ricotta Cheesecake

- 2 15-oz containers whole-milk ricotta
- 1 T unsalted butter, room temperature
- 1 T plus 1 cup sugar
- 3 T. unseasoned dry breadcrumbs
- 2 8-oz packages, room temperature, cut in cubes
- 2 large eggs
- 2 T. salt-free matzo meal
- 1 T. fresh lemon juice
- 2 1/2 T lemon zest
- 2 t. vanilla extract
- 1/4 t. kosher salt
- Powdered sugar (for dusting)
Slow Cooker Brown Sugar Ham

- 1 (8 pound) cured, bone-in picnic ham
Chinese Cabbage Salad

In a preheated 350 degree F oven (175 degree C), toast the crushed noodles and nuts until golden brown
- 1 (3 ounce) package ramen noodles, crushed
- 10 ounces cashew pieces
- 1 (16 ounce) package shredded coleslaw mix
- 1 bunch green onions, chopped
- 1/2 cup white sugar
- 1/2 cup vegetable oil
- 1/4 cup cider vinegar
- 1 tablespoon soy sauce
Cheddar-Beer Weinies

The day before: Preheat oven to 400 degrees F
- 1 14 ounce package beef cocktail wieners
- 12 - 16 slices bacon, cut crosswise into thirds
- 2 tablespoons butter
- 1 cup finely chopped onion (1 large)
- 2 cloves garlic, minced
- 1 cup beer
- 1/2 16 ounce jar (about 3/4 cup) cheddar pasta sauce or one 10.75-ounce can condensed cheddar cheese soup
- 1 teaspoon bottled hot pepper sauce (such as Cholula brand)
- 1/2 teaspoon chili powder
Lazy Morning Sausage Pie

Packaged biscuit mix makes this egg and cheese dish come together quickly
- 1 pound bulk pork sausage
- 1 large onion, chopped (1 cup)
- 1 cup shredded American, Swiss or cheddar cheese (4 ounces)
- 2 eggs, lightly beaten
- 1 cup lowfat milk or fat-free milk
- 1/2 cup packaged biscuit mix or packaged lowfat pancake and baking mix
- Salsa
- Dairy sour cream
- Fresh baby spinach leaves or small basil leaves (optional)
Pickled Shrimp

Bring Old Bay and 8 cups water to a boil in a 4-qt
- 2 tbsp. Old Bay seasoning
- 1 lb. (26–30 count) medium shrimp, peeled and deveined
- 1/2 tsp. celery seeds
- 1/4 tsp. allspice berries
- 1 cup extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/4 cup packed flat-leaf parsley leaves, finely chopped
- 1 tbsp. kosher salt
- 1/2 tsp. crushed red chile flakes
- 2 cloves garlic, finely chopped
- 12 dried bay leaves
- 1/2 medium yellow onion, thinly sliced lengthwise
