1. Combine the vegetables and apples in a large bowl and mix well
- 3 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 cup jicama, julienned
- 1/2 red onion, finely chopped
- 2 Red Delicious apples, finely diced
- 1/2 cup fat-free mayonnaise
- 1/3 cup white vinegar
- 2 tablespoons plus 2 teaspoons fructose
- 2 tablespoons plus 2 teaspoons Dijon mustard
- 1-1/2 teaspoons caraway seed
- 1/4 teaspoon salt
- pinch white pepper
Stacy's Cheesy Chicken Bake

Quick, easy and yummy! Can be prepared ahead of time and baked when you need it
- 1 10 oz bag of chopped broccoli
- 2 lbs chicken strips
- 2 cans cream of mushroom (i use fat free)
- 2 cans cream of chicken (1 use fat free)
- 1 cup Mayo (i use light)
- 1 bag shredded cheddar (i use light)
- 2 tablespoons butter
- bread crumbs
Manicotti

A traditional Italian dish made from scratch, no store bought shells here! This recipe freezes well so double it up...
- 1 cup flour
- 2 lbs Ricotta
- 1/2 lb Mozzarella (sliced)
- 1 cup water
- 7 eggs
- 1/2 plus 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
- Tomato/Spaghetti sauce (I prefer homemade)
Skinny Spagetti Carbonara

Cook yourself thin
- 3 slices bacon
- 1 teaspoon olive oil, additional for bread
- 1 small onion, diced
- 1/3 cup 1% milk
- 1 large egg
- 8 oz spaghetti
- 1 cup frozen peas
- 1 1/2 oz Parmesan cheese, finely grated, (about 6 tablespoons)
- 1/4 cup sliced fresh flat-leaf parsley
- S & P to taste
- 1 whole-grain baguette, sliced
- 1/2 garlic clove
- 2 teaspoons chopped basil

- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla
- 4 cups coarsely shredded apples
Jalapeno Popper Chicken

I know what I'm making tonight! Jalapeno popper filling inside a breaded and baked chicken breast
- HOMEMADE TACO SEASONING MIXTURE:
- 1/2 cup Panko
- 2 teaspoons canola oil
- 1 1/2 – 2 teaspoons taco seasoning or mixture in notes*
- 1 egg
- 2 ounces reduced fat cream cheese
- 1/4 cup cheddar cheese, shredded (we used 2%)
- 1-2 jalapeño peppers, seeds and ribs removed, minced
- 2 chicken breasts
- Combine the following
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon oregano
- 1/8 teaspoon paprika
- Salt and black pepper to taste.
Berry Marble Cheesecake

Easy and low-fat
- 1/3 cup crushed graham crackers (about 5 squares)
- 1/2 teaspoon ground cinnamon
- 3 8-oz packages nonfat cream cheese
- 1 cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla
- 1/2 teaspoon finely shredded lemon peel
- 1/2 cup egg product (egg beaters)
- 1/4 cup milk
- 1/2 cup nonfat sour cream
- 1/4 cup seedless red raspberry preserves

Juicy & tasty, a great family recipe
- 1 1/2 pounds ground veal
- 1/2 pound ground pork
- - If you can ask your butcher to grind it together twice for you. The finer meat will make a more tender meatball
- 4 cloves garlic

- parsley (dried or fresh)

- 1 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 2 packages (6 squares) white baking chocolate, chopped
- 2 cups nuts, chopped (I use walnuts)
- 2 cups dried cranberries

- 1 bay leaf
- 3/4 lb chicken breast, no skin or bone, cubed
- 4 cups canned chicken broth
- 1/2 lb cooked crabmeat, picked over
- 3 cups cooked white rice
- 1 tsp file powder (optional)
