Sweet potato and celery root side dish
- 3 lbs sweet potatoes, peeled and diced
- 1 lb celery root, peeled and sliced to 1/4 inch thick
- 2 garlic cloves, finely chopped
- 1 small onion, chopped
- 1/3 cup 1% milk
- 1 1/2 Tablespoon olive oil
- 1/2 teaspoon salt
Tuscan Baked Chicken and Beans

1. Preheat oven to 350°. 2
- 1 (3 1/2-pound) roasting chicken
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 slices center-cut bacon
- 1 cup chopped onion
- 1/8 teaspoon kosher salt
- 2 cups packed torn spinach
- 1/2 teaspoon chopped fresh rosemary
- 2 (16-oz) cans cannellini or white beans, rinsed & drained
- 1 (14.5-ounce) can diced tomatoes, undrained
Potato Leek Gratin

In 12" nonstick fry pan over medium heat, melt 4 tablespoons butter
- 5 tablespoons unsalted butter
- 4 lbs leeks, white & light green parts, rinsed well & cut into 1/4" rings
- 1 1/2 tablespoons kosher salt
- 1 teaspoon minced thyme
- 1/4 teaspoon ground nutmeg
- 3/4 teaspoon ground pepper
- 1 cup heavy cream
- 6 oz Gruyere cheese, grated
- 3 oz Parmigiano-Reggiano cheese, grated
- 3 lbs russet potatoes, peeled, cut in 1/4" slices
- 3 tablespoons minced chives
Penne with Vodka Cream Sauce

- 6 oz Penne, cooked and drained
- 2 Tablespoons plus 2 teaspoons reduced cal margarine
- 3 Medium shallots, chopped
- 1/4 cup low sodium chicken broth
- 1 Tablespoon tomato paste
- 1/4 teaspoon crushed red pepper
- 1/4 cup heavy cream (less points if replace w ff half & half)
- 1 oz (2 Tablespoons) Vodka
- Grated Parmesan Cheese for topping (additional points)

- 1 cup uncooked quick oats
- 2 medium egg whites

- 1 1/2 teaspoon beef bouillon granules
- 1/2 teaspoon black pepper
- 1 1/4 cup barbecue sauce

- 2 cups loosely packed fresh cilantro

- Glaze:
- 1 1/4 cups confectioners' sugar
- 2 tablespoons baking cocoa
- 1/2 teaspoon vanilla extract

- 1/3 cup cooked lean ground beef
- 3 tablespoons taco sauce
- 4 large burrito-size wheat flour tortillas
- 4 oz blue cheese, crumbled
- 10 oz chopped frozen spinach, thawed & squeezed dry
- 1/2 teaspoon red pepper flakes
