Roasted Ranch Potatoes

Preheat oven to 350 degrees
- 2 pounds potatoes (unpeeled, washed and cut into chunks)
- 1/2 cup ranch dressing (bottled, not packet)
- 1/2 cup shredded cheddar cheese, plus 1/4 cup more for topping
- 1/4 cup crumbled, cooked bacon or real bacon pieces from jar
- 1 tablespoon dried dill weed
- 3 scallions, washed and chopped
- Salt
- Pepper
- Sour Cream (optional)
- Non-stick cooking spray
toffee 'dream' pie

in top of double boiler ,combine marshmallows, and milk until the marshmallows melt
- 1 10 oz pkg. marshmallows
- 2/3 cup milk
- 1 (1&1/4 oz)toffee candy bars,crushed ( i use heath)
- 1 8 or 9 inch baking pie shell
- whipping cream
- 2 tbsp. toasted almonds ( optional)
Guacamole Deviled Eggs

Instructions Remove egg yolks from the halved eggs and place in a small bowl
- Ingredients
- 6 hard boiled eggs, peeled and cut lengthwise
- 1 ripe avocado, pitted and peeled
- 1 tbsp fresh lime juice
- 1/4 tsp salt
- 1/4 tsp onion powder
- 1 tsp Gourmet Garden Garlic (or 1 tsp minced garlic)
- 2 tsp Gourmet Garden Cilantro (or 2 tsp finely chopped cilantro)
- Smoked Paprika
Princess Pie (Coconut Cream Pie)

Mix and pat in an 8x8 inch pan, bake at 350 degrees for 15-20 minutes, until just beginning to turn golden
- crust: 1 cup flour 1/2 cup butter, melted 2 Tbs sugar 1/2 cup chopped pecans - optional
- Layer two: 8 ounces cream cheese, room temperature 1 cup powdered sugar 1 cup whipped topping
- Layer three: 1 small package coconut cream instant pudding 1 1/2 cups whole milk (any milk will do, but whole milk makes pudding so much tastier)
5 minute Chocolate Syrup

- Ingredients: 3/4 cup cocoa powder 1 1/4 cups water 1 1/2 cups sugar 1 1/2 teaspoons vanilla extract or any other flavor (I love hazelnut and almond) Dash salt
Famous Red Lobster Shrimp Scampi

1 Heat cast iron skillet and add olive oil
- 1 lb medium shrimp, peeled and deveined
- 1 tablespoon pure olive oil
- 2 tablespoons garlic, finely chopped
- 1 1/2 cups white wine, I use chardonnay
- 1/2 fresh lemon, Juice
- only 1 teaspoon italian seasoning
- 1/2 cup softened butter
- 1 tablespoon parsley
- 1/2 cup grated parmesan cheese
rhubarb jam

rhubarb sugar and water until rhubarb is tender ( about 30 minutes) then remove from heat
- 10 cups of rhubarb cut into small pieces
- 6 cups sugar
- 1/2 cup water
- 1 20 oz can crushed pineapple (not drained)

- 1/4 cup unsweetened cocoa
- 1 teaspoon baking soda
- One eighth teaspoon salt

- 4 eggs
- 1 cup buttermilk
- 2 teaspoons vanilla extract

- 1 (5-ounce) can evaporated milk

- 1 cup brown sugar, packed
