Peppermint Popcorn Bark

It is finally Christmas baking time at my house
- 2 bags microwave popcorn, popped (18-20 cups)
- 1 6oz box candy canes, crushed
- 1 package Almond Bark
- 1 tsp peppermint extract or a few drops of peppermint oil

- COOK:
- 8 oz. dry angel hair pasta
- CRISP:
- 1 oz. prosciutto, thinly sliced
- 1 1/2 lb. jumbo shrimp, peeled and deveined
- 1 Tbsp. minced garlic
- 1/2 tsp. red pepper flakes
- 2 Tbsp. olive oil
- DEGLAZE:
- 1/2 cup dry white wine
- 2 Tbsp. fresh lemon juice
- ADD:
- 1 cup seeded and diced Roma tomatoes
- 1/2 cup thinly sliced scallions
- 2 tsp. chopped fresh rosemary
- Minced zest of 1 lemon
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
- Olive oil

Preheat oven to 350 degrees
- Cake portion:
- 2 cups sugar
- 1/2 pound (2 sticks) butter, at room temperature
- 2 eggs
- 1 tablespoon cocoa powder
- 1 tablespoon royal blue gel food coloring
- 1 small dab of violet gel food coloring
- 2 1/2 cups cake flour
- 1 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1 tablespoon vinegar
- Frosting:
- 1 pound cream cheese, softened
- 2 sticks butter, softened
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners' sugar

- 1/2 cup butter, unsalted, at room temperature
- 1/2 cup shortening, I use butter flavored Crisco
- 1 cup sugar
- 1/2 cup molasses
- 2-1/4 tsp. baking soda
- 1 tsp. salt
- 1-1/4 tsp. ground cinnamon
- 1 tsp. ground cloves
- 1 tsp. ground ginger
- 2 large eggs, at room temperature
- 3-1/2 cups flour, all-purpose
- coarse sugar crystals for coating the cookies

- 1 c. white sugar
- 1 c. brown sugar
- 3 eggs
- 1 1/2 c. peanut butter

- 4 1/2 c. oatmeal
- 1 1/2 c. chocolate chips
- 1 1/2 c. mini M & M’s

- 2 cups crab meat
- 16 oz. cream cheese (2 blocks)
- 1/2 cup sour cream
- 4 green onions, chopped
- 1 1/2 tsp. Worcestershire sauce

- 1/2 tsp garlic powder

- 14 tablespoons unsalted butter (1 3/4 sticks)

- 3/4 cup packed dark brown sugar
- 1 teaspoon table salt
- 2 teaspooons vanilla extract
- 1 large egg
- 1 large egg yolk
- 1 1/4 cups semisweet chocolate chips or chunks
- 3/4 cup chopped pecans or walnuts, toasted (optional)
