Easy French Toast Bake

Made for the 2017 Zumba Ladies Christmas Brunch
- Topping:
- 1 loaf French bread
- 8 eggs
- 2 cups milk
- 1/2 cup heavy cream - half and half would work, too
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1 tablespoon vanilla extract
- 2 teaspoons cinnamon
- 1/2 cup flour
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspooon salt
- 1/2 cup unsalted butter, cold and cut into small squares
Chunky Country-Style Spiced Applesauce

Combine apples, water and lemon juice in a heavy large Dutch oven; bring to a boil on high heat
- 2 pounds each Granny Smith and Golden Delicious apples, cored, peeled, sliced
- 2 cups water
- 2 tablespoons lemon juice
- 1/2 cup sugar
- 1/2 teaspoon ground cinnamon
Brownie Muffins

These muffins are used with the Turtle Turrine recipe
- Melt and cool:
- 2 cups semisweeet chocolate chips
- 10 tablespoons unsalted butter
- Whisk in:
- 4 large eggs, lightly beaten
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon table salt
- Fold in:
- 1 cup all-purpose flour
- 1 cup milk chocolate chips
- 1 cup walnuts or pecans (optional)
- Top with:
- Milk chocolate chips
Vodka Slush

In a saucepan, combine 1/4 cup sugar and 3 cups water
- 1/4 cup sugar & 3 cups water
- 1 6 ounce can frozen orange juice, defrosted
- 1 6 ounce can frozen lemonade, defrosted
- 24 ounces unsweetened pineapple juice
- 2 tablespoons lemon juice
- 2 ripe bananas (blended)
- 1 1/2 cup vodka (or light rum can be used)
Banana Split Ice Cream Dessert

1. Take your ice cream out of the freezer and set aside on your counter to soften
- 3 cups each of vanilla, chocolate and strawberry ice cream (1/2 of a 44 ounce container)
- 3/4 cup pecans (optional- I left off and sprinkled chopped peanuts on top of each slice.)
- Chopped peanuts (see note above.)
- 1 (5 ounce) box of sugar cones
- 5 tablespoons melted butter
- 2 tablespoons sugar
- dash salt
- 2 medium ripe bananas
- 1 cup Cool Whip
- 1 jar of hot fudge and/or caramel
- whipped cream
- marachino cherries
Goat Cheese Spread

Top cheese with sundried tomatoes and sprinkle with dill
- 1- 8 ounce log of goat cheese
- 1/4 cup sundried tomatoes, packed in oil, chopped
- Fresh dill
Spinach-Asparagus Salad with Strawberry Dressing

1. Make dressing: Combine strawberries, juice, vinegar, honey, oil and salt in a blender or food processor
- 1 cup strawberries, stemmed
- 1/2 cup orange juice
- 2 tablespoons raspberry vinegar
- 2 tablespoons extra virgin olive oil
- 4 teaspoons honey
- 1/4 teaspoon salt
- 8 cups trimmed spinach leaves
- 1 pound asparagus spears, blanched and drained
- 4 tablespoons toasted slivered almonds
Banana Bread

- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup semisweet chocolate chips (optional)
- 3/4 cup walnuts, toasted, chopped (optional)
- 1/2 cup unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs
- 1 cup mashed ripe bananas
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoon vanilla extract
Roast Turkey Pieces

Made with a pomegranate molasses butter
- Whisk:
- 1 whole turkey, thawed, about 12 pounds
- 2 teaspoons each salt and pepper
- 6 tablespoons unsalted butter, melted
- 3 tablespoons pomegranate molasses.

- 1 teaspoon cold water
- 1 pound pecan halves
- 1/2 cup bulk Splenda
- 1/2 teaspoon cinnamon
