Spaetzle with Swiss Cheese

Combine ingredients. Boil a large pot of water and add in a pinch of salt
- 1 1/2 cups flour
- 2 eggs
- salt
- 1/2 cup half and half
- 10 ounces grated Swiss cheese
- Medium onion
- 3 tablespoons butter
Caribbean Truffle Pie

This lemon-lim pie hits the spot on a warm summer evening
- Crust:
- 1 package (15 oz.) refrigerated pie crusts
- 2 tablespoons coconut
- Streusel:
- 1/4 cup all-purpose flour
- 1/4 cup sugar
- 4 teaspoons butter
- 1/4 cup coconut
- Filling"
- 1 package (2.9 oz.) lemon pudding and pie filling (not instant)
- 1/2 cup sugar
- 3 tablespoons lime juice
- 2 egg yolks
- 2 cups water
- 1 teaspoon grated lime peel
- 1 cup vanilla milk chips or a chopped white baking bar
- 1 package (8 oz.) cream cheese, softened
- 6 tablespoons sour cream
- Topping and Garnish
- 1/2 cup whipping cream
- Lime slices, cut into fourths
Taco Seasoning Mix

Mix all spices together and store in an airtight container for 6 months to a year
- 2 1/2 tablespoons chili powder
- 1 1/2 tablespoons paprika
- 2 tablespoons cumin, or to taste. (I used just 1 tablespoon.)
- 2 teaspoons oregano
- 1 tablespoon garlic powder
- 1 1/2 tablespoons onion powder
- 1/2 teaspoon cayenne pepper, if you like it spicy
- 1 teaspoon salt, adjust for your taste. The salt helps to keep it fresh when storing.
Strawberry White Wine Cooler

The wine cooler can be made four hours before serving
- 2 quarts of strawberries, trimmed
- 2/3 cup sugar
- 2 - 750 ml bottles of dry white wine
- (I've used one bottle of Sauvignon Blanc and one bottle of Reisling.)
Samoa Truffles

- 1 can dulce de leche
- 1 can sweetened condensed milk
- 1 box Niland Wafer cookies, crushed
- 16 ounces Ghiradelli dark chocolate
Pesto

Chop the basil, garlic and pine nuts in a food processor
- 2 cups fresh basil leaves
- 4 teaspoons minced garlic
- 2 tablespoons pine nuts
- 1/3 cup extra-virgin olive oil
- 2 tablespoons grated Parmesan
- Salt and pepper to taste
Cheesy Parmesan Garlic Bread

You can substitute finely shredded white cheddar for the Parmesan cheese and fresh chopped chives for the parsley
- 1 loaf French bread (not the long thin kind)
- 1/2 - 3/4 cup butter, softened
- 1/2 cup mayonnaise
- 1-2 tablespoons minced garlic
- 3-4 teaspoons dried parsley or 3 tablespoons fresh parsley
- 1/2 teaspoon dried oregano
- 1/3 - 1/2 cup grated Parmesan cheese
Spinach, Feta and Artichoke Breakfast Bake

Preheat the oven to 375 degrees
- 1 (10 ounce) package frozen chopped spinach, thawed, all excess water removed
- 1/2 cup scallions, finely chopped
- 3/4 cup chopped artichokes (from cam, not marinated) drained and patted dry
- 1/3 cup diced red pepper
- 1 clove garlic, minced
- 1 tablespoon chopped fresh dill
- 8 eggs
- 4 large egg whites
- 1/4 cup fat free milk
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/2 cup crumbled feta
Winter Caprese Salad

One of my favorite salads is insalata caprese, or a salad of fresh tomatoes, buffalo mozzarella and basil
- For roasted tomatoes:
- 2 large balls of Buffalo or Fresh mozzarella
- 12 roasted tomatoes
- 1/8 cup pesto sauce
- 1/8 cup extra virgin olive oil
- Salt and pepper
- Whole basil leaves
- Italian black olives
- olive oil
- 1 teaspoon sugar
- 1 teaspoon or to taste Italian seasonings
- salt to taste
Overnight Cinnamon Apple Baked French Toast Casserole

Grease a 9x13 pan Combine the bread chunks and chopped apples and layer in the bottom of the dish
- 1 lb. loaf French bread, cut into chunks
- 3 cups chopped apples (2 large apples)
- 8 large eggs
- 2 cups whole milk
- 1/2 cup heavy whipping cream
- 1/2 cup sugar
- 1/4 cup light brown sugar, loosely packed
- 2 tablespoons vanilla extract
- 1 1/2 teaspoons cinnamon

- 3/4 cup all-purpose flour
- 3/4 cup firmly packed light brown sugar
- 1 teaspoon cinnamon
- 1 1/2 teaspoon apple pie spice
