Chocolate Cherry Cake

1. Preheat oven to 350 degrees
- 1 (18.25 ounce) package devil's food cake mix
- 1 (21 ounce) can cherry pie filling
- 1 teaspoon almond extract
- 2 eggs
- 1 cup sugar
- 5 tablespoons butter
- 1/3 cup milk
- 1 cup semisweet chocolate chips
Shrimp Saganaki

This recipe serves two. The amount of each ingredient depends on your person taste
- 12 large shrimp
- 3 tablespoons olive oil
- 1/2 small red onion, large dice
- 1/2 red pepper, large dice OR
- 1/2 yellow pepper, large dice
- 1/2 teaspoon crushed red pepper or to taste
- 1/2 cup kalamata olives, diced
- 2 medium ripe tomatoes, seeded and diced (about 1 cup or so) I used several Compari tomatoes.
- 1/2 cup Greek feta, coarsely crumbled (plus a little more for the top
- 1 teaspoon dried oregano (I didn't add this)
- 1 cup marinara (I used Trader Joes tomato and basil marinara)
- Salt to taste
Cheesy Mini Corn Muffins

Preheat oven to 325 degrees
- 1/4 cup plain nonfat yogurt
- 1/4 cup vegetable oil
- 1 egg
- 6 tablespoons sugar
- 1 (8 1/2 ounce) can cream-style corn
- 1/2 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup cornmeal
Ham and Cheese Quiche

Preheat oven to 350 degrees
- 1 Pillsbury frozen pie crust
- 1 cup half and half
- 4 eggs slightly beaten. (I probably would use 5 next time.)
- 1/4 teaspoon each salt and pepper
- 4 ounces Cheddar cheese, grated
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped onion (optional). I cut the onion up fine and saluted it.
- Diced ham. (I didn't measure. Used a ham steak.)
Kit Kat Bar Cookies

1. Put graham crackers, brown sugar, white sugar, butter and milk in a saucepan and bring to a boil
- Butter cracker such as Waverly
- 1 1/2 cup crushed graham crackers (I buy the already crushed ones.)
- 3/4 cup brown sugar
- 1 cup white sugar
- 3/4 cup butter
- 1/3 cup milk
- 1 cup butterscotch chips
- 1 cup semisweet chocolate chips
- 3/4 cup peanut butter
Red Lobster Cheddar Bay Biscuits

Preheat oven to 450 degrees
- For the topping:
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 2 teaspoons garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cayenne pepper
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted

These light, crispy phyllo pastry roll-ups are filled with spinach, breadcrumbs and feta cheese
- 1/2 cup olive oil
- 1 bunch green onions, sliced
- 2 (10 ounce) packages frozen, chopped spinach, thawed and well drained
- 2 tablespoons chopped fresh dill
- 3 extra large eggs, slightly beaten
- 7 ounces feta cheese, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 40 sheets frozen phyllo dough, thawed in the refrigerator (large size sheets)

- 2 large onions plus one medium sized onion
- 1 cup small brown lentils
- 4 cups water
