Low Fat, Sugar Free Cornbread

This is a low cal modification of my mom's cornbread recipe
- 1 cup flour
- 1 cup cornmeal
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1/3 cup Splenda sugar substitute, for baking,not packets
- 1 egg
- 1 1/4 cups nonfat milk
- 1/4 cup melted i can't believe it not butter light margarine

- 4 ripe but firm yellow peaches, chopped (skin on or off, your choice, skin on makes for better color, but if skin is too thick or fuzzy you may want to peel first)
- 2-3 Tbsp chopped shallots or onions
- 2-3 jalapenos, chopped (stem, seeds and ribs discarded)
- Juice of a lemon
- 2 Tbsp chopped fresh mint
- 2 Tbsp grated ginger
- 1 teaspoon sugar
- Salt and black pepper to taste
Spicy Shrimp and Pasta Casserole

Preheat the oven to 350 degrees F
- Butter, for greasing pan
- 2 eggs
- 1 1/2 cups half-and-half
- 1 cup plain yogurt
- 1/2 cup grated Swiss cheese
- 1/3 cup crumbled feta cheese
- 1/3 cup chopped fresh parsley leaves
- 1 teaspoon dried basil, crushed
- 1 teaspoon dried oregano, crushed
- 9 ounces angel hair pasta, cooked
- 16 ounces mild salsa, thick and chunky
- 2 pounds shrimp, cleaned, peeled, and deveined
- 1/2 cup grated Monterey Jack
Chicken Marinade

Combine all ingredients in plastic bag and let bird soak
- 4 tsp salt
- 2 tsp paprika
- 1 tsp onion powder
- 1 tsp thyme
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1 large chicken
Italian Baked Chicken and Pastina

- 1 cup pastina pasta (or any small pasta)
- 2 tablespoons olive oil
- 1/2 cup cubed chicken breast (1-inch cubes)
- 1/2 cup diced onion (about 1/2 a small onion)
- 1 clove garlic, minced
- 1 (14.5-ounce) can diced tomatoes with juice
- 1 cup shredded mozzarella
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup bread crumbs
- 1/4 cup grated Parmesan
- 1 tablespoon butter, plus more for buttering the baking dish
Baked Sweet Potato Fries

Heat oven to 425° F. Slice each sweet potato lengthwise into 8 pieces
- 2 medium sweet potatoes, scrubbed and dried
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon paprika
Quinoa Soup

Heat EVOO and butter over medium heat, add onions and saute until translucent
- 2 TBSP EVOO
- 2 TBSP butter
- 1 large onion, medium dice
- 2 minced garlic cloves
- 1 medium red bell pepper, seeded, medium dice
- 1 medium carrot, peeled, medium dice
- 1 large potato, medium dice
- 1 cup quinoa, lightly toasted in a dry skillet
- 1 tsp ground cumin
- 8 cups chicken or vegetable stock
- 1 14 ounce can Muir Glen fire-roasted tomatoes
- 1 cup each frozen and thawed corn kernels and green peas
- salt to taste---cilantro leaves for garnish, parsley-cilantro oil
Breakfast Enchiladas

Simply cook the sausage in a frying pan
- Ingredients: (Serves 8 )
- 1 lb sausage
- 2 cups shredded cheddar chesse
- 8 (8 in) flour tortillas
- 6 eggs
- 1 T all-purpose flour
- 2 cups of half and half
- 3 oz of real bacon bits
Zucchini-Banana Squares

Directions 1. Preheat oven to 350 degrees F
- Nonstick cooking spray
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/4 cup ground flaxseeds or wheat germ
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs, slightly beaten
- 3/4 cup sugar
- 1/2 cup canola oil
- 1/3 cup low-fat milk
- 1 cup peeled (if desired) and shredded zucchini
- 1 medium-size ripe banana, mashed (1/2 cup)
- 1/2 cup miniature semisweet chocolate pieces (optional)
Ranch Style Cole Slaw

Mix all cole slaw dressing ingredients together, and then mix them into the cabbage
- 1/3 cup mayonnaise
- 2/3 cup sour cream
- 2 Tablespoons lemon juice
- Artificial sweetener to equal 2 T sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/8 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon plus one pinch salt
- 1 lb cabbage, shredded
