1. Heat oil in a Dutch oven over medium heat
- 2 teaspoons canola oil
- 1 1/2 cups chopped onion (about 1 large)
- 3 garlic cloves, minced
- 2 cups fat-free, less-sodium chicken broth
- 5 teaspoons green hot pepper sauce (such as Tabasco)
- 1/2 teaspoon kosher salt
- 1 1/4 pounds skinless, boneless chicken breast halves
- 2 tablespoons stone-ground cornmeal
- 1 (19-ounce) can cannellini beans or other white beans, rinsed and drained
- 1/2 cup plain fat-free yogurt
- 2 tablespoons thinly sliced green onions (about 1)
- Lime wedges (optional)

- 2 small plum tomatoes, diced
- 1 tablespoon chopped fresh basil
- Pinch freshly ground black pepper
- 1⁄2 cup liquid egg substitute
- 1⁄2 cup 1% cottage cheese
- 1⁄4 cup fat-free evaporated milk
- 3⁄4 ounce shredded reduced-fat Monterey Jack cheese
Tomato Freezer Salsa

Core, seed and coarsely chop tomatoes
- 10 - 15 large ripe tomatoes (10 cups chopped)
- 1 tbsp canola oil
- 2 large onions, chopped
- 8 cloves garlic, minced
- 8 jalapeno peppers, finely chopped (or other hot peppers)
- 2 green peppers, chopped
- 1/2 cup fresh cilantro, choppled
- 1/4 cup lime juice or cider vinegar
- 3 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp granulated sugar
- 2 tsp salt
- 1/2 tsp cayenne pepper
- 1 tsp black pepper
