Quiche 'Hashbrowns

1.) Preheat oven to 450 degrees F
- 3 cups, shredded frozen hash browns, thawed and drained
- 4 tablespoons (1/2 stick) butter, melted
- 3 large eggs, beaten
- 1 cup half-and-half
- 3/4 cup diced cooked ham
- 1/2 cup diced green onions
- 1 cup shredded Cheddar
- Salt and freshly ground black pepper
Chilli - P'Butt [St] 'Verde'

1. In a medium Dutch oven, heat the oil, add the onion, peppers and garlic
- 4 pounds pork butt, cut into 1-inch cubes, trimmed of fat
- 4 yellow onions, chopped
- 4 Anaheim chiles
- 2 jalapeno, minced
- 4 tablespoons garlic, chopped
- 1 pound tomatillos, husk removed
- 1/2 cup white wine
- 1/4 cup white vinegar
- 1 cup chicken stock
- 2 tablespoons ground oregano
- 2 tablespoons ground cumin
- 1 tablespoon salt
- 1 tablespoon ground black pepper
Fettuccine - Turkey 'Smoked Chipotle'

1 CHIPOTLE FETTUCCINE 2 Mix Flour & Salt in Lrg
- 1- 1/2 cup Whole Kernel Corn
- 1/2 cup H20
- 1 sm. Chopped Onion
- 2 Tbs Butter or Margarine
- 2 Tbs All-Purpose Flour
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 cup Milk
- 1/2 cup 1/2 & 1/2
- 2 cups Cut-up Smoked Turkey Breast
- CHIPOTLE FETTUCCINE
- 2 cups All-Purpose Flour
- 1/2 tsp Salt
- 1 Tbs Vegetable Oil
- 2 ea. Eggs
- 1 to 2 Canned Chipotle Chilies in Adobo Sauce. Chopped
Sandwich -B- 'Philly Steak

1.Place the beef in a large bowl
- 1 pound beef sirloin, cut into thin 2 inch strips
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon dried basil
- 3 tablespoons vegetable oil
- 1 onion, sliced
- 1 green bell pepper, julienned
- 3 ounces Swiss cheese, thinly sliced
- 4 hoagie rolls, split lengthwise

- 4 slices high-quality white sandwich bread
- 2 Tbs unsalted butter
- 4 large eggs
- Table salt and ground black pepper
Seasoning - TexMex 'Recaito'

Place the onion and garlic in the work bowl of a food processor fitted with the metal blade
- 1 medium Spanish onion, cut into big chunks
- 8 cloves garlic, peeled
- 6 ajicitos dulces (see recipe for Sofrito) or 1 cubanelle peppers, cored, seeded, and cut into chunks
- 4 leaves culantro (if you can't find culantro, increase the amount of Iajicitos or cilantro by half)
- 6 big sprig cilantro, stems and all, coarsely chopped (about 1 cup packed)
Pasta - Sauce 'Tomato Basil

- 2 Tbsp Olive Oil
- 2 cloves Garlic (chopped)
- 1 med. Onion (chopped)
- 20 leaves Fresh Basil (shredded)
- 1 (14 oz.) can diced Tomatoes (drained)
- Salt & Pepper
- 1 (28 oz.) crushed Tomatoes
Stuffin - CornBread 'Sausage, Red Peppers, & Chipotle

In this recipe, the stuffing is baked outside of the turkey in a baking dish
- 12 cups cornbread broken into 1-inch pieces (include crumbs), spread in even layer on 2 baking sheets, and dried in
- 250 -degree oven 50 to 60 minutes
- 3 cups chicken stock or canned low-sodium chicken broth
- 2 cups half-and-half
- 2 large eggs , beaten lightly
- 8 tablespoons unsalted butter (1 stick), plus extra for baking dish
- 2 red bell peppers , cut into 1/4-inch pieces
- 3 medium onions , chopped fine (about 3 cups)
- 3 rib celery , chopped fine (about 1 1/2 cups)
- 4 - 5 chipotle chiles en adobo , chopped (about 4 tablespoons)
- 2 tablespoons minced fresh thyme leaves
- 2 tablespoons fresh sage leaves , minced
- 3 cloves garlic , minced
- 1 1/2 pounds andouille sausage , cut into 1/2-inch pieces
- 1 tablespoon kosher salt
- 2 teaspoons ground black pepper
Salsa - Tomato [R] 'Chipotle

Note: Chipotle peppers (smoked jalapeños) are available both canned and dried
- You'll also need:
- 2 large ripe red tomatoes
- 1 small white onion, peeled and quartered
- 3 cloves garlic, peeled and skewered on a wooden tooth pick
- 1 to 2 chipotle peppers (see Note)
- 3 tablespoons coarsely chopped fresh cilantro
- 1 tablespoon fresh lime juice, or more to taste
- Coarse salt (kosher or sea) and freshly ground black pepper
- 1 cup wood chips or chunks (preferably mesquite), unsoaked
