- 1 1/2 tablespoons soy sauce

- 1 1/2 tablespoons fresh lime juice, more to taste
- 1 1/2 teaspoons toasted (Asian) sesame oil, more for drizzling
- 1 1/2 teaspoons Asian fish sauce
- 1 teaspoon honey
- 2 tablespoons peanut oil, more if needed
- 6 ounces sugar snap peas, trimmed and thinly sliced
- 3 scallions, thinly sliced
- Sesame seeds, for serving
- Cooked rice, for serving

Sift flour, cocoa, espresso powder if using & 3/4 cup sugar twice, set aside Beat egg whites with cream of tartar,
- 3/4 cup sifted cake flour
- 1/4 cup unsweetened baking cocoa
- 1 1/2 cups sugar divided into 3/4 cup and 3/4 cup
- 1 1/2 cups egg whites (about 12)
- 1 1/2 teaspoons cream of tartar
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- Opt: 1/8-1/4 tsp espresso powder
- Note: to substitute AP flour for cake flour: 1 cup cake flour is equivalent to 1 cup All Purpose flour minus 1 tbs A P flour plus 1 tbs cornstarch

- 10 1/2 ounces King Arthur Unbleached All-Purpose Flour
- 7 ounces sugar
- 3/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 ounce Cake Enhancer, optional, for moist texture
- 5 1/2 ounces peeled, diced seedless clementines or tangerines
- 1 teaspoon vanilla extract or 1/4 teaspoon Fiori di Sicilia
- 2 3/8 ounces vegetable oil
- 8 ounces orange juice or tangerine juice
- FROSTING
- 9 ounces confectioners' sugar, sifted
