STIR-FRIED SNOW PEAS WITH TOFU cooksillustrated
- 1 tablespoon hoisin sauce
- 1 tablespoon Worcestershire sauce (vegetarian)
- 1 tablespoon soy sauce
- 3 tablespoons dry sherry
- 1 teaspoon toasted sesame oil
- 2 tablespoons peanut oil
- 8 ounces extra-firm tofu , drained, dried well with paper towels, and cut into 1 by 1 by 1/2-inch cubes
- 1 pound snow peas , tips pulled off and strings removed
- 2 medium cloves garlic , minced or pressed through a garlic press
- 1/2 teaspoon fresh ginger , minced

- 1 medium onion , 3 medium shallots or 1 medium leek (white and light green parts only), chopped
- 2 tablespoons dry sherry or white wine
- 1 medium head cauliflower (about 2 pounds), stems discarded and florets cut into bite-sized pieces (about 5 cups)
- 2 cups low-sodium chicken broth or low-sodium vegetable broth
- 1 teaspoon table salt
- Ground white pepper
- 1 teaspoon ground coriander(I did not use)
- 1/2 - 3/4 cup whole milk
- 2 teaspoons minced fresh chives , or minced parsley

- 1 tablespoon Pizza Dough Flavor (optional)
- 418 g King Arthur Unbleached Bread Flour
- 1/2 teaspoon instant yeast
- Use the greater amount of water in winter, when conditions are dry; and the lesser amount in summer, when the weather is humid.
- FILLING:
- 283 g grated Gruyère cheese, or the grated/shredded cheese of your choice - (used 16 oz mozzarella) (sharp cheddar, or a mixture of provolone and mozzarella are tasty)
- 1 tablespoon garlic oil (optional)
- 1 tablespoon Pizza Seasoning (optional) (used my own Ital seasoning)
