- ICING
- 1 1/2 cups unsalted butter, at room temperature
- 8 to 10 cups confectioners' sugar
- 3/4 cup milk
- 1 tablespoon vanilla extract
- FILLING
- 1/2 cup strawberry preserves
- 1 quart fresh strawberries
- 1 quart fresh blueberries

- 1 box plain Melba toast (about 5 ounces), broken into 1-inch pieces
- 2 tablespoons vegetable oil
- 3 large egg whites
- 1 tablespoon Dijon mustard
- 2 teaspoons minced fresh thyme leaves
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 4 split bone-in chicken breasts (about 10 ounces each), trimmed following the illustration below and skin removed
- Vegetable cooking spray
