- 1 1/4 cups (10 ounces) light brown sugar
- 1 cup plus 2 tablespoons (8 ounces) granulated sugar
- 2 large eggs (weight of 1 large egg w/o shell = 50 grams)
- 2 teaspoons natural vanilla extract
- 1 1/4 pounds bittersweet chocolate disks or fèves, at least 60 percent cacao content (see note)
- Sea salt.

- 1/2 pound unsalted butter (2 sticks), chilled and cut into 1/4-inch pieces
- 8 ounces cream cheese , chilled and cut into 1/2-inch chunks
- 2 tablespoons sour cream
- Fruit Filling
- 1 cup granulated sugar
- 1 tablespoon ground cinnamon
- 2/3 cup apricot preserves , processed briefly in food processor to break up large chunks
- 1 cup raisins , preferably golden
