- sugar: 2 1/2 cups = 17.5 oz = 500 grams - divided:
- butter, unsalted, softened but cool (65 degrees): 5 cups = 2.5 lbs =1 kilogram
- 14 oz & 3.5 oz
- water: 3/4 cup = 6.25 oz = 177 grams
- 12 large egg whites (pasteurized) = 1 1/2 cups (use glass liquid measure)= 12.5 oz = 360 grams
- cream of tartar: 1 1/2 tsp = 12 grams
- liqueur such as Grand Marnier or an eau-de-vie: 1 cup (use glass measure) = 8.5 oz = 240 grams
- to omit liqueur: add 2 - 3 tsp vanilla extract
