  • 1 cup mixed raisins and currants (or all raisins)*, plumped
  • 2 1/2 cups whole-wheat flour
  • 1 1/2 cups unbleached all-purpose flour
  • 3 tablespoons bran
  • 2 tablespoons oatmeal
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/3 cup brown sugar
  • 2 tablespoons honey
  • 1 1/4 teaspoon salt
  • 1 tablespoon caraway seeds (optional)
  • 6 tablespoons cold, unsalted butter, diced
  • 1 1/4 to 2 cups buttermilk
  • Bran and Oatmeal for dusting
  • I recommend 1 cup Thompson raisins, and 1/2 cup sultanas or currants.
