Irish Soda Bread - Buttermilk

- 1 cup mixed raisins and currants (or all raisins)*, plumped
- 2 1/2 cups whole-wheat flour
- 1 1/2 cups unbleached all-purpose flour
- 3 tablespoons bran
- 2 tablespoons oatmeal
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/3 cup brown sugar
- 2 tablespoons honey
- 1 1/4 teaspoon salt
- 1 tablespoon caraway seeds (optional)
- 6 tablespoons cold, unsalted butter, diced
- 1 1/4 to 2 cups buttermilk
- Bran and Oatmeal for dusting
- I recommend 1 cup Thompson raisins, and 1/2 cup sultanas or currants.
