Sesame Braid Crusty

- POOLISH (STARTER):
- Ingredients
- 1 cup (8 ounces) cool water, about 65°F
- 2 cups (8 1/2 ounces) King Arthur Unbleached All-Purpose Flour - (try 1 cup WWW & 1 cup AP)
- 1/4 teaspoon (a pinch) instant yeast, such as SAF
- DOUGH:
- 1/2 cup (4 ounces) cool water, about 65°F
- 2 to 2 1/2 cups (8 1/2 to 10 5/8 ounces) King Arthur Unbleached All-Purpose Flour
- 2 teaspoons instant yeast (remainder of yeast packet, if using one)
- 1 1/2 teaspoons salt
- 1 egg white mixed with 1 tablespoon water
- 1/4 cup (1 1/4 ounces) sesame seeds or whole flax seeds

- For the Chili Mayonnaise
- 1/2 cup mayonnaise
- 1/4 cup Asian chili sauce*
- 1 tablespoon fresh lemon juice
- 1 tablespoon fish sauce*
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- For the Vegetable Rolls
- 1/2 red bell pepper, seeded, cored and cut into thin slices
- 1/2 yellow bell pepper, seeded, cored and cut into thin slices
- 1 large carrot, shredded
- 1/4 cup chopped fresh mint leaves
- 1/4 cup chopped fresh basil leaves
- 6 rice paper rounds*
- 6 butter lettuce leaves, ribs removed
- 1 1/2 cups cooked cellophane noodles or bean threads, cooled*

- Makes 4 1/2 dozen cookies.
- INGREDIENTS
- 1-7 oz box Odense Almond Paste
- 8 tablespoons butter, room temperature
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon baking powder
- 2 & 1/2 cups all-purpose flour
- 6 cups cornflakes, lightly crushed - I added crushed sliced almonds as well
- Added: 1 tsp almond extract
- Orange peel-a few pieces added into dough when rolling./
- Coated w chocolate & choc coated orange peel, drizzle w white choc
- try-add 1/4 tsp orange oil?
Middle Eastern Black Rice and Lentil Salad on a Bed of Spinach

- 1 cup black rice
- 1/2 cup black (beluga) or green lentils, washed and picked over
- 2 3/4 cups water
- Salt to taste
- 1/3 cup olive oil
- 2 to 3 garlic cloves (to taste), minced
- 1 teaspoon freshly ground cumin seeds
- 3/4 teaspoon freshly ground coriander seeds
- 1/4 teaspoon freshly ground cardamom seeds
- Salt and freshly ground pepper to taste
- 1/4 cup chopped cilantro
- 1/4 cup chopped fresh mint or parsley, or a combination
- 1/4 cup chopped dill
- 1/4 cup chopped chives or green onions
- 1/4 cup soaked split red lentils*
- 3 tablespoons fresh lemon juice
- 1 bunch spinach, stemmed, washed thoroughly in 2 changes water and dried, or 1 bag baby spinach, rinsed and dried
- 4 or 5 radishes, sliced, for garnish
- To make soaked lentils, cover with water and soak for 2 hours or longer. Drain. Store what you don’t use in the refrigerator and add to salads

- Apricot Sesame Sambal Sauce:
- 1 tablespoon oil
- 1 small carrots, diced
- 1/2 celery rib, diced
- 1/2 red bell pepper, diced
- 5 snap peas, diced
- 1/2 cup diced red onion
- 1/2 cup mung beans, cut in 1/2
- 2 chicken breast, diced
- 6 ounces Apricot Sesame Sambal Szechwan Sauce, recipe follows
- 5 fried wonton skins
- 6 iceberg lettuce leaves
- 2 tablespoons diced green onions
- 2 tablespoons crushed, unsalted peanuts
- Black sesame seeds, for garnish
- 1/2 cup soy sauce
- 3 tablespoons minced garlic
- 3 tablespoons minced ginger
- 3 tablespoons sambal hot sauce
- 3 tablespoons apricot preserves
- 1/4 cup rice wine vinegar
- 3 tablespoons hoisin sauce
- 1 teaspoon minced cilantro
- 2 teaspoons sesame seeds
- 1 teaspoon sesame oil
- Mix all ingredients thoroughly. Shake before serving.

- 3 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/2 cup warm milk
- 1 tablespoon canola oil, plus more as needed

- INGREDIENTS
- 2 1/2 cups strong black coffee , room temperature
- 1 1/2 tablespoons instant espresso powder
- 9 tablespoons dark rum
- 6 large egg yolks
- 2/3 cup sugar
- 1/4 teaspoon table salt
- 1 1/2 pounds mascarpone cheese
- 1/3 cup cream for adding to yolks
- 3/4 cup cold heavy cream for whipping
- 14 ounces ladyfingers (42 to 60, depending on size)
- 3 1/2 tablespoons cocoa , preferably Dutch-processed
- 1/4 cup semisweet or bittersweet chocolate , grated (optional)
