"I especially love the flavor and aroma of fresh bay leaves with turkey
- 3 Tbsp EVOO (extra virgin olive oil) plus more for the roasting pan
- 1 small (golf ball-size) onion, peeled and coarsely chopped
- Zest of 1 lemon
- 12 fresh sage leaves
- Large handful of fresh flat-leaf parsley
- 1 teaspoon salt
- 4 Tbsp butter
- 8 fresh bay leaves
- 2 boneless turkey breast halves, skin on (2 to 2-1/2 lb. each)
- 3 Tbsp all-purpose flour
- 1/4 cup apple brandy, such as Calvados, or regular brandy
- 2 cups apple cider

- 2 teaspoons of Golden Fig Apple Pie Spice or 1 1/4 teaspoon ground cinnamon, 1/4 teaspoon allspice, and 1/4 teaspoon nutmeg
