CHEESY BACON HASH BROWN BAKE

Heat oven to 350 degrees F
- 8 SLICES BACON, CHOPPED
- 2 cups frozen country style hash browns, thawed
- 1/2 lb. fresh mushrooms, sliced
- 1 each, red and green pepper, chopped
- 1 small onion, chopped
- 12 eggs
- 1/3 cup sour cream
- 3/4 lb. (12 oz) Velvetta cheese, thinly sliced

- 1 chocolate cake mix
- 1 can cherry pie filling
- 3 eggs
- Top with fudge frosting, whipped topping, grated chocolate or more cherry filling
- LUSCIOUS LEMON:
- 1 lemon or white cake mix
- 1 can lemon pie filling
- 3 eggs
- Top with lemon glaze and whipped topping
- APPLE CINNAMON SPICE:
- 1 spice cake mix
- 1 can applesauce or apple pie filling
- 3 eggs
- Drizzle with caramel, top with ice cream or whipped topping
- RAGING RED RASPBERRY:
- 1 white or chocolate cake mix

A lighter and fluffier than most zucchini breads
- 2 cups sugar
- 1 cup canola oil
- 3 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 2 cups shredded zucchini (about 2 medium)
- 1/2 cup chopped nuts
- 1 teaspoon grated lemon peel
WHITE CHOCOLATE OATMEAL COOKIES

Sarah loves these cookies! I sometimes add white and chocolate chips and call them black and white cookies
- 1 cup butter or margarine softened
- 1 cup firmly packed brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1-1/2 cups uncooked oatmeal
- 2 cups (12 ounces) vanilla and/or chocolate morsels
- 1 cup coarsely chopped nuts OPTIONAL
FISH TOSTADAS WITH CHILI LIME CREAM

- 1 lb. fresh tilapia or cod fillets
- 1/2 tsp. chili powder
- 1 lime, halved
- 1/2 cup sour cream
- 1/2 tsp. garlic powder
- 8 6-inch tostada shells
- 2 cups shredded cabbage mix
- 1 avocado, halved, seeded, peeled, and sliced (optional)
- 1 cup cherry tomatoes, quartered (optional)
- Bottled hot pepper sauce (optional)
CRANBERRY ORANGE SCONES

The tart cranberry and sweet citrus are a great combination
- For the Scones:
- 2 cups all-purpose flour
- 10 teaspoons sugar, divided
- 1 tablespoon grated orange peel
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/3 cup cold butter or margarine
- 1 cup dried cranberries
- 1/4 cup orange juice
- 1/4 cup half-and-half cream
- 1 egg
- 1 tablespoon milk
- For the Glaze:
- 1/2 cup confectioners' sugar
- 1 tablespoon orange juice
- For the Orange Butter:
- 1/2 cup butter, softened
- 2 to 3 tablespoons orange marmalade
Dark Chocolate-Espresso Shortbread

Combine first 5 ingredients in a medium bowl; set aside
- 1 1/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 cup unsweetened cocoa
- 1 teaspoon instant espresso powder or instant coffee powder (we tested with Café Bustello)
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 3 ounces white chocolate baking bar (we tested with Ghirardelli)
- 3 ounces unsweetened chocolate baking bars
COOL 'N EASY STRAWBERRY PIE

Very light and wonderful for a hot summer dessert
- 2 cups fresh strawberries, divided
- 2/3 cup boiling water
- 1 pkg. (3 oz) JELL-O Strawberry flavor gelatin
- Ice cubes
- 1/2 cup cold water
- 1 tub (8-oz) COOK WHIP LITE whipped topping, thawed
- 1 ready to use reduced fat graham cracker crumb crust (6 oz.)
TRIPLE CHOCOLATE TIRAMISU

1. Line the bottom of an 8x8x2-inch baking pan with some of the ladyfingers, cutting to fit as necessary
- Ingredients
- 2 3-ounce packages ladyfingers, split
- 1/4 cup brewed espresso or strong coffee
- 1 8-ounce carton mascarpone cheese
- 1 cup whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla
- 1/3 cup chocolate liqueur
- 1 ounce white chocolate baking squares or white baking bars, grated
- 1 ounce bittersweet chocolate, grated
- Unsweetened cocoa powder
- Chopped chocolate-covered coffee beans (optional)

- 1-1/2 lb. Yukon Gold potatoes, thinly sliced, 4 cups
- 1-1/2 lbs. red potatoes, thinly sliced, 4 cups
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1-1/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. ground allspice
- 3 cups half-and-half
- 1-1/2 cups shredded fontina cheese, about 6 oz.
- 1 Tbsp. chopped fresh parsley
