ULTIMATE BANANA BREAD FROM AMERICAS TEST KITCHEN

Makes one 9-inch loaf Be sure to use very ripe, heavily speckled (or even black) bananas in this recipe
- 1 3/4 cups (8 3/4 ounces) unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon table salt
- 6 large very ripe bananas (about 2 1/4 pounds), peeled (see note)
- 8 tablespoons (1 stick) unsalted butter , melted and cooled slightly
- 2 large eggs
- 3/4 cup (5 1/4 ounces) packed light brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup walnuts , toasted and coarsely chopped (optional)
- 2 teaspoons granulated sugar
TEX-MEX CHICKEN CASSEROLE

Very good
- 2 cups shredded cooked chicken
- 2 cups crushed tortilla chips
- 1 can (15 ounce) beans, rinsed and drained
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheese
- 2/3 cup sour cream
- 1/2 teaspoon chili powder
PEANUT BROWNIE BISCOTTI

1. Preheat oven to 375 degrees F
- 1/3 cup creamy peanut butter
- 1/4 cup butter, softened
- 2/3 cup sugar
- 1/3 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 2 eggs
- 1 teaspoon vanilla
- 1 3/4 cups all-purpose flour
- 1 cup chopped bittersweet or semisweet chocolate (about 6 ounces)
- Peanut Butter Icing
- 1/2 cup powdered sugar
- 2 tablespoons peanut butter
- 1 - 2 tablespoons milk

Sarah's very favorite bar! I underbake a bit to make them chewy and gooey
- CRUST:
- 1 cup shortening (NEVER USE BUTTER!!!)
- 1/2 cup granulated sugar
- 1 tablespoon cold water
- 1/2 teaspoon soda
- 1/2 cup brown sugar
- 2 egg yolks
- 1 teaspoon baking powder
- 2 cups flour
- MERINGE:
- Beat egg whites until stiff.
- Add 1 cup brown sugar and mix thoroughly.
JEAN'S WILD RICE CASSEROLE

- 6 tablespoons margarine or butter
- 2 medium onions thinly sliced
- 1/2 cup uncooked regular rice
- 1/2 cup uncooked wild rice
- 1 teaspoon salt (optional)
- 1/8 teaspoon pepper
- 1 can consume
- 1 cup water
- 1 4-ounce can mushrooms and juice
- 2-3 tablespoons soy sauce

- Add:
- 1 cup wild rice (boil and drain three times with cold water)
- 1 pound hamburger
- 1 pound Jimmy Dean sausage
- Chopped onion and celery
- Brown hamburger and sausage.
- 1 cup chopped mushrooms, drained
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
Spicy Orange Beef

In a large bowl, whisk together cornstarch and salt
- 1/3 cup cornstarch
- 1/2 teaspoon kosher salt
- 1 1/4 pounds beef steak, thinly sliced across the grain and cut into 2-by-1/3-inch strips
- 6 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1 1/2 teaspoons minced fresh ginger, optional
- 7 small dried red chiles or
- 1/2 teaspoon chili powder
- 1/2 cup orange juice
- 2 tablespoons orange marmalade
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 4 cups cooked white rice, for serving
ASIAN CABBAGE SALAD

Prepare peanut butter dressing
- 1 recipe peanutbutter dressing
- 6 cups packaged shredded cabbage with carrot (coleslaw mix)
- 1 cup fresh sugar snap peas, trimmed and thinly sliced lengthwise
- 1/2 cup coarsely shredded, peeled jicama
- 1/4 cup thinly sliced green onions
- 1/4 cup sliced almonds, toasted
- Fresh cilantro (optional)

- 2 cups all-purpose flour
- 11/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 large eggs, lightly beaten
- 11/2 cups mashed ripe bananas (about 3 medium)
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 teaspoon grated lemon zest
- 1/4 cup toasted walnuts or pecans, coarsely chopped
- Hint: Use very ripe bananas for a stronger banana flavor.
