CILANTRO PESTO

Most people think of basil as the default herb for pesto, but Emeril turns out a great pesto using cilantro
- 2 cups packed fresh cilantro leaves
- 3/4 cup hulled pepitas (raw pumpkin seeds), toasted
- 1/2 cup grated cotija cheese
- 2 cloves garlic, crushed
- 1 cup plus 2 tablespoons canola, grapeseed or other neutral oil
- 1 teaspoon grated lime zest
- 2 tablespoons freshly squeezed lime juice
- Salt and freshly ground pepper

Good, Solid Recipe from Southern Living Yield: 4 dozen
- 2 (1/4-ounce) envelopes active dry yeast
- 1/2 cup warm water (100° to 110°)
- 1 cup warm milk (100° to 110°)
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 teaspoon salt
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 5 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 cup raisins

- 1 box cake mix, chocolate
- 4 large eggs
- 3/4 cup oil
- 1 cup water
- 1 pint sour cream
- 1 small instant chocolate pudding
- 12 ounces semi-sweet chocolate chips
PUMPKIN MUFFINS

- 3 1/2 cups flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ground nutmeg
- 2/3 cup vegetable shortening
- 2 cups canned pumpkin
- 4 eggs, slightly beaten
- 2 1/4 cups sugar
- 2/3 cups milk
- 3/4 cups chocolate chips (optional)

I asked my grandmother for this recipe after trying these irresistible spice cupcakes at her home
- CUPCAKES:
- 3 eggs
- 1-1/3 cups sugar
- 1/2 cup canola oil
- 1/2 cup orange juice
- 1 teaspoon almond extract
- 2-1/2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon ground cloves
- 1-1/2 cups shredded zucchini
- CARAMEL FROSTING:
- 1 cup packed brown sugar
- 1/2 cup butter
- 1/4 cup 2% milk
- 1 teaspoon vanilla extract
- 1-1/2 to 2 cups confectioners' sugar
EASY STUFFED MUSHROOMS

PREHEAT broiler. Mix stuffing mix and hot water in medium bowl; cover
- 2 cups STOVE TOP Stuffing Mix for Chicken in the Canister
- 1 cup hot water
- 16 large mushrooms (about 1 lb.)
- 3 Tbsp. butter or margarine
- 1/2 of a small green pepper, finely chopped
- 1/2 of a small red pepper, finely chopped
- 2 Tbsp. butter or margarine, melted
