Combine first 8 ingredients in a large bowl
- 2 cups all-purpose flour
- 1 cup sugar
- 1/3 cup chopped walnuts
- 1/4 cup unsweetened cocoa
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 2 tsp instant coffee granules
- 2 tsp hot water
- 1 tsp vanilla extract
- 2 eggs
- 1 egg white
- cooking spray
Pumpkin Spice Cake

1. Allow butter and eggs to stand at room temperature for 30 minutes
- 1/4 cup butter
- 2 eggs
- 2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. ground ginger
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1/4 cup shortening
- 1 1/2 cups sugar
- 1/2 tsp. vanilla
- 3/4 cup buttermilk or sour milk
- 3/4 cup canned pumpkin
- 1 recipe Browned Butter Frosting (see recipe, below)
- 1 1/4 cups chopped, toasted pecans
- Ground cinnamon mixed with ground cloves or pumpkin pie spice (optional)
Beef and Mushroom Sloppy Joes

1. Heat a large nonstick skillet over medium-high heat
- 1 tablespoon olive oil
- 12 ounces ground sirloin
- 2 (8-ounce) packages presliced cremini mushrooms
- 1 cup prechopped onion
- 3 garlic cloves, minced
- 1/2 cup no-salt-added tomato paste
- 1 tablespoon minced fresh oregano
- 2 tablespoons red wine vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon molasses
- 1/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1/2 teaspoon hot sauce

Chicken Stroganoff

1. Heat 1 tablespoon of the oil in a large saucepan over medium heat
- 2 tablespoons olive oil
- 3 medium yellow onions, thinly sliced into rings
- 1 green pepper, seeded and thinly sliced
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 8 ounces (15 medium) button mushrooms, thinly sliced
- 4 boneless, skinless chicken breasts, cut into 1/2-inch-thick strips

- 6 cups blueberries
- 2 tablespoons brown sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon fresh lemon juice
- 2/3 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup regular oats
- 3/4 teaspoon ground cinnamon
- 4 1/2 tablespoons chilled butter or stick margarine, cut into small pieces
- 2 cups vanilla low-fat frozen yogurt

Do-Ahead Mashed Potatoes

- Potatoes:
- 5 lbs peeled potatoes, cooked, drained and mashed
- 2 cups sour cream
- 6 Tbs butter
- 2-1/2 tsp salt
- 1/2 tsp pepper
- Topping:
- 1/2 cup crumbs
- 2 Tbs melted butter
