1. Cook pasta according to package directions, omitting salt and fat
- 1 (9-ounce) package refrigerated fresh fettuccine
- 2 slices applewood-smoked bacon, chopped
- 1 teaspoon minced garlic
- 1 tablespoon all-purpose flour
- 1 cup 1% low-fat milk
- 2/3 cup (about 2 1/2 ounces) grated Parmigiano-Reggiano cheese
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon freshly ground black pepper
Creamy Breakfast Oats and Quinoa

Combine the milk, honey, cinnamon and salt in a medium saucepan over medium heat
- 1 1/2 cups whole, low-fat or nonfat milk (may substitute soy or rice milk)
- 1 • 1 tablespoon honey
- 1/4 • 1/4 teaspoon ground cinnamon
- • Pinch salt
- 1/2 • 1/2 cup cooked quinoa (see NOTE)

- 1/4 cup finely crushed baked tortilla chips (about 3/4 ounce)
- 2 tablespoons finely chopped green onions
- 1 tablespoon finely chopped cilantro
- 1/8 teaspoon ground cumin
- 1 large egg white
- 1 1/2 teaspoons canola oil
- Spread:
- 1/4 cup mashed peeled avocado
- 2 tablespoons finely chopped plum tomato

- 1 tsp soy sauce

1. Using thin knife, trim silver skin from tenderloin
- 1-1/2 lb pork tenderloin, trimmed
- 1/4 cup fresh orange juice
- 1/4 cup grapefruit juice, fresh (note: pineapple juice works fine)
- 2 Tbs chopped cilantro
- 1 tsp cumin
- 1 tsp dried oregano
- 2 cloves garlic, finely chopped
- 1/2 tsp kosher salt
