Chinese Seafood Pan-fried NoodleS

Begin by cleaning seafood (shrimp and scallops), peel, devein, and butterfly shrimp
- INGREDIENTS:
- 16 medium shrimp
- 1 1/2 cup scallops
- 1 medium carrot
- 1/4 cup water chestnuts, whole or sliced
- 1 cup broccoli flowerets
- 1 cup snow peas
- 1/2 cup straw or regular mushrooms
- 6 baby corn, whole
- 1/4 cup bamboo shoots
- 1 1/2 cup sliced red and yellow bell peppers
- 1 1/2 cup sliced napa cabbage
- Chinese noodles
- vegetable oil
- Seafood marinade***
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg white
- 2 tablespoons cornstarch
- Sauce***
- 1 teaspoon diced garlic
- 1 teaspoon diced ginger root
- 2 tablespoons sliced scallions
- 2 cups chicken stock or broth
- 1 tablespoon white wine
- 1/2 cup oyster sauce

1. Soak the vermicelli in warm water for 10 minutes 2
- 1 package vermicelli noodle - wai wai brand
- 1 tbsp of Tapioca or cornstarch
- Hanh mo
Chuoi Chien - Fried Banana

Peel and flatten with the banana with a smooth flat surface such as the side of a large knife or other flat surface
- 2 lbs of ripe bananas (bananito/mazano/xiem variety)
- 1 package of fried banana flour (bot chuoi chien–see below, but any brand will do)
- 1 3/4 cup water or what is directed by your brand of flour mix
- 3 tbs sugar
- 1 ts salt
- 16 oz can of coconut milk–of which save about 3 tbs for the batter.

- Dipping Sauce
- Remainder of the coconut milk
- 2 tbs sugar
- 1 ts salt
- 3 tbs toasted sesame
Crispy Chicken Wings

Preheat the oven to 450 degrees F
- Ingredients:
- 2 lbs chicken wing pieces
- salt
- 3 tbsp Frank's hot sauce
- 2 tbsp butter
- dash of worcestershire sauce
- ground cayenne pepper to taste
Shrimp and Andouille Sausage Gumbo

1. Heat oil heavy large Dutch oven over high heat until almost smoking 2
- 1/2 cup vegetable oil
- 1/2 cup all purpose flour
- 4 celery stalks, coarsely chopped
- 2 medium onions, coarsely chopped
- 2 green bell peppers, chopped
- 2 bay leaves
- 2 teaspoons salt
- 2 teaspoons dried oregano, crumbled
- 1/2 teaspoon cayenne pepper
- 5 8-oz bottles clam juice
- 1 28-oz can plum tomatoes, drained, chopped
- 1 lb smoked andouille or kielbasa sausage, halved lengthwise, sliced 1/4 inch thick
- 2 lbs uncooked medium shrimp, peeled and deveined
- Freshly cooked long grain rice

1. Heat oil in a large saucepan over medium heat
- 1 tbs vegetable oil
- 1 onion, chopped
- 1 1/2 cloves garlic, minced
- 1/2 lb ground beef
- 6 ounces of beef sirloin, cubed
- 1/2 (14.5 ounce) can peeled and diced tomatoes with juice
- 1/2 (12 fluid ounce) can or bottle of dark beer
- 1/2 cup strong brewed coffee
- 1 (6 ounce) can tomato paste
- 1/2 (14 ounce) can beef broth
- 1/4 cup packed brown sugar
- 1 tb and 2 1/4 teaspoons chili powder
- 1 1/2 teaspoon cumin seeds
- 1 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 2 (15 ounce) cans kidney beans
- 2 fresh hot chile peppers, seeded and chopped
Che Dau Trang - Black Eyed Peas Pudding

In an 8-cup sauce pan add the sweet rice with the 4 cups of water
- Che Dau Ingredients:
- 1 cup of glutinous sweet rice
- 4 cups of water
- 1/2 cup of sugar
- 1 can of black eyed peas
- Coconut Sauce Ingredients:
- 1 can of coconut milk
- 1/4 cup of half and half
- 2 teaspoons of cornstarch
- 3 teaspoons of sugar
Vietnamase Beef Jerky (Thit kho bo)

Unlike other jerky recipes this Vietnamese version only requires 30 minutes of cook time
- 3 pounds beef (ball tip roast, top round or sirloin roast, fat trimmed)
- 3 tablespoons lemongrass
- 2 tablespoons garlic, minced
- 2 tablespoons sugar
- 1 tablespoon salt
- 1 tablespoon five spice powder or curry powder
- 1 tablespoon turmeric powder or curry powder
- 1/2 teaspoon ground pepper
- 2 teaspoons oil or oyster sauce
Blackberry Margaritas

MASH together blackberries and sugar in a medium bowl with a potato masher
- 1 cup fresh blackberries
- 1 Tbsp sugar
- 3/4 cup SAUZA Blanco Tequilla
- 1 (12-oz) can frozen lemonade concentrate, thawed
- 3 cups club soda
- 3 cups ice cubes
- Garnish: fresh blackberries
Grapefruit Margaritas

STIR together first 3 ingredients in a large pitcher
- 2 cups no-sugar-added ruby red grapefruit juice
- 2/3 cup SAUZA Blanco Tequilla
- 1/4 cup sweetened lime juice
- 2 cups ginger ale
- 2 cups crushed ice
- Garnish: sliced grapefruit
