In a large bowl, toss together all of the ingredients for the salad
- For the salad:
- 3 green mangoes, cut into matchsticks
- 1/4 cup dried shallots, fried
- 1/2 cup vietnamese coriander (rau ram), chopped

- 1/2 cup peanuts, toasted and roughly chopped
- 20 medium shrimp, shelled and de-veined

1. Mix group 1(dry ingredients) together in a bowl

- 1 pound of rice flour (16 ounces) (Flying horse brand)
- 2 Tbsp tapioca flour (Cock brand) (hieu con ga)
- 2 Tbsp corn starch
- 3/4 tsp salt
- Group 2
- 2 tsp olive oil (or vegetable oil)
- 6 cups of water total (3 cold cups & 3 hot cups)
- Group 3
- 1-2 Tbsp olive oil (used to oil the idli plates)

For the lemongrass purée: Wash the lemongrass stalks
- Ingredients
- Yields: 10 servings
- 6-1/4 to 6-1/2 quarts water
- 10 lemongrass stalks (2 bunches), depending on the size
- 1 dozen beef bones (the more, the sweeter the broth will be)
- 2-1/2 pounds beef shanks
- 1 yellow onion, peeled
- 1 (4-inch) chunk fresh ginger
- 1 teaspoon MSG (optional)
- 4 tablespoons canola oil
- 3 cloves garlic, finely minced
- 6 shallots, finely chopped
- 4 tablespoons nước mắm (fish sauce)
- 2 teaspoons sugar
- 3/4 teaspoon red chili powder, to taste
- 1 teaspoon paprika, for color
- 2 (8-ounce) packages rice noodles, boiled
- 1/3 cup salt
- 4 teaspoons mushroom seasoning salt (or regular salt)
- 1 chunk rock sugar (about 2 ounces), or (3-1/2 tablespoons granulated sugar)
- 1 white onion (milder in flavor), thinly sliced
- 6 sprigs Thai basil
- 6 sprigs Vietnamese mint
- 6 sprigs tía tô (see tips)
- 6 sprigs rau răm (see tips)
- 2 tablespoons ngò gai (see tips), optional
- 3 tablespoons cilantro
- 2 cups red cabbage, shredded
- 4 cups iceberg lettuce
- 3 tablespoons green onions, chopped
- 14 fresh red bird chile peppers
- 1 jar mắm ruốc (shrimp paste), optional
- 1 package chả lụa gà (see tips), sliced
- 3 limes, cut into wedges
- 3 cups bean sprouts

Clean the fish steaks, rinse well and pat dry
- 1 lb catfish steaks (bone and skin on--or substitute with tuna, mackerel..etc)
- 4 tbs fish sauce
- 3 tbs brown sugar
- 2 tbs minced shallots
- 2 tbs minced garlic
- 1 tbs black pepper
- 3 green onions, sliced 1 inches long
- 3 tbs caramel sauce (we like the coco caramel syrup seen above--if you can't find this see below)
- 1 can of young coconut juice
- 1 thai chili (thinly sliced, optional)

In mixing bowl, add the pork, fish sauce, and sugar and mix
- 2 lbs fresh lean pork loin– ground twice–ask your butcher (substituting other lean meats such as chicken or turkey may work–we just haven’t tried)
- 1 cup water
- 2 tbs fish sauce
- 1/2 tbs sugar
- 2 bag of Alsa baking powder (try to use this brand–commonly found in Asian markets or other Single acting baking powder)
- 2 tbs tapioca flour
