Ground Beef Stew

In a large skillet, cook beef over medium heat until no longer pink; drain
- 1 lb ground beef
- 6 medium potatoes peeled and cubed
- 1 package baby carrots
- 3 cups water
- 1 garlic clove minced
- 1 tsp Italian seasoning
- 1 can tomato paste
- 1 1 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- 1 can condensed tomato soup diluted

Clean and chop chicken. Put pieces in a colander to drain and sprinkle about 1 tsp salt over the chicken
- 1 2.5 to 3 lb. chicken, cut into about 8 pieces
- 2 14-oz cans Coconut Milk
- 1 large onion, diced
- 4 About 4 potatoes, peeled and cut into 2-inch chunks
- 1 potato, peeled and cut into 1-inch chunks
- 2 carrots, peeled and cut into 2-inch chunks
- 1 2-inch knob of ginger, minced

- 1 tsp salt
- Nuoc Mam (Vietnamese Fish Sauce) to taste
- Vietnamese French bread, rice, or flat rice noodles for serving
Perfect Turkey

1. Rub the turkey inside and out with the kosher salt
- 1 (18 lb.) whole turkey, neck and giblets removed
- 2 cups kosher salt
- 1/2 cup butter, melted
- 2 large onions, peeled and chopped
- 4 carrots, peeled and chopped
- 4 stalks celery, chopped
- 2 sprigs fresh thyme
- 1 bay leaf
- 1 cup dry white wine

Spread out the meat loosely mesh and grill until nicely golden brown and slightly charred
- 1.5 lb pork butt or shoulder, thinly sliced just under 1/4 inch or so (not too thin as you do not want it to dry out when grilled. Ask your butcher to do this for you. Also, do not use lean pork as it will become dry.)
- 1/4 cup minced Lemongrass (xa bam). Many Asian markets will sell minced lemongrass in the freezer section.
- 1/4 cup sugar
- 2 tbs fish sauce
- 1 tbs ground pepper
- 2-3 cloves garlic, minced (use more according to taste)
- 2-3 shallots, minced.
- 3 tbs sesame oil
- 1 tbs thick soy sauce (not regular soy sauce--has molasses, making it thicker and adding great color. If not available, can use caramel sauce. Both can be found at Asian groceries)
- 3 tbs roasted sesame
- flexible grilling basket or indoor grill

Method: 1. If you have time, freeze the place the steak for about 15 minutes to firm and be easier to cut
- 1 1/4 pounds well-marbled tri-tip (bottom sirloin) steak, well trimmed (about 1 pound after trimming)
- 2 large cloves garlic, minced and crushed to a paste
- 1 small shallot, finely chopped (about 2 1/2 tablespoons total)
- 2 teaspoons light brown sugar
- 1/8 teaspoon salt
- Generous 1/4 teaspoon black pepper, freshly ground preferred
- 1 tablespoon fish sauce
- 1 tablespoon light (regular) soy sauce
- 2 tablespoon oil
- 1 pound fresh banh hoi fine rice noodles
- 1/2 cup Scallion Oil Garnish
- 1 small head soft leaf lettuce, such as red leaf, green leaf, or butter leaf
- 8 to 12 sprigs cilantro
- 8 to 12 sprigs mint
- 1 small English cucumber, seeded and sliced, optional
- 8 to 12 sprigs of other Vietnamese herbs, such as red perilla (tia to) and Vietnamese balm (kinh gioi), optional
