Vegan Crazy Dough

Instructions If you’re using instant yeast, mix it directly to flour
- 2 1/2 cup (550 ml, 550 g) non-dairy milk, lukewarm
- 2 tsp sugar
- 80 g fresh yeast (or 4 tsp active dry yeast or 4 tsp instant yeast)
- 6 2/3 cup (1 kg) all-purpose flour
- 4 tsp baking powder
- 3 tsp salt
- 1/2 tsp lemon juice
- 4 Tbsp + 1 tsp oil
Vegan Mushroom Bourguignon

Quarter mushrooms and slice onions and carrots into bite-size pieces
- 2 tbsp olive oil
- 2 cups white mushrooms
- 1 yellow onion
- 2 carrots
- 1/2 tsp dried thyme
- 2 cloves garlic
- 1/2 cup full-bodied red wine
- 1 cup vegetable broth
- 2 tbsp tomato paste
- 1.5 tbsp gluten-free flour (I used brown rice flour)
- 4 oz gluten-free pasta
- salt and pepper to taste

Instructions Preheat oven to 350 degrees F and spray 7-8 standard-sized muffin tins with cooking spray
- 1/2 cup (1 stick) non-dairy butter (such as Earth Balance)
- 3/4 cup natural cane or granulated sugar
- 2 large flax eggs (2 tbsp flaxseed + 6 Tbsp water)
- 1 tsp vanilla extract
- 3/4 tsp baking powder
- 1/4 tsp sea salt
- 1/2 cup dutch-process cocoa powder
- 3/4 cup unbleached all purpose flour
- (Optional add-ins:) 1/3 cup walnuts, hazelnuts or chocolate chips
Vegan Caprese

Refreshing, delicious way to use up those basil trimmings and tomatoes from your garden
- 5-6 ripe tomatoes, chunked
- 1/2 cup fresh basil leaves (prune those suckers and make this salad)
- 2 T balsamic vinegar
- 2 T olive oil
- Himalayan pink salt
- Ground black pepper and dried papaya seeds (I mix them in my pepper mill)
- cubed, baked tofu, coated in olive oil, smoked paprika and seasalt, 15 minutes per side at 425 F (30 mins total)

1. Make your flax egg. You can use a coffee grinder to grind fresh flax seeds if needed
- 1 cup of dairy-free, dark chocolate chips
- 2 cups of gluten-free flour (I used Bob’s Red Mills all-purpose)
- 3/4 cup organic cane sugar
- 2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1 flax egg (1T ground flax mixed with 3 T water, set in fridge 1hr)
- 3/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil or olive oil

- 7-9 rounds of eggplant, sliced 1/4-inch thick (~half of a medium eggplant)
- Olive oil
- Sea salt
- 1.5-2 cups unsweetened original almond milk
- 2-3 Tbsp nutritional yeast (see instructions)
- 1/4 tsp finely minced fresh garlic (I used crushed garlic from Trader Joe’s)
- 1 tsp cumin
- 1 tsp chili powder
- 2 tsp cornstarch (optional for thickening | sub another thickener if desired)
- 1/4 cup chunky medium salsa, slightly drained (OR 1/4 10-ounce can of Rotel original diced tomatoes and green chilies)
- OPTIONAL: Smoked paprika and hot sauce for added color and flavor upon serving.

- 1/2 lb. oyster mushrooms (Pleureotis ostreatus) I used pink ones, because I grow them in the living room
- 3 T ground flax seed mixed with 6 T water (sub for egg)
- 4 T blue corn meal
- 4 T flour and nutritional yeast blend
- 1/2 t pepper
- 1/2 t salt
- 1 t Old Bay
- 1/2 t smoked paprika
- 1/2 t chipotle
- ground walnuts
- add nut milk till it's a good consistency for coating
- 4 Tblsp. vegetable or olive oil (optional...these can also be baked at 350F for 10 minutes one side, turn over and bake for 5)
