Vegan Corned Beef and Cabbage Recipe

Sauté the onion in a large pot with a little olive oil until it starts to brown
- 2 medium onions, cut into wedges
- 3/4 head cabbage, chopped or shredded
- 4 carrots, cut into 2-inch lengths and quartered
- 4 ribs celery, thickly sliced
- 6 cups vegetable broth
- 1 teaspoon thyme (it was too dark to see the tiny thyme to cut on the balcony, so I cut some rosemary)
- 1/4 teaspoon rubbed sage
- 1 teaspoon dry mustard (I used all the stoneground wet mustard I had...1 tsp +)
- 1 teaspoon mild horseradish (I used wasabi)
- 1 tablespoon red wine vinegar
- salt and freshly ground pepper, to taste
- 6-8 ounces vegetarian "beef" or seitan

Place cashews in a bowl and cover with cool water
- 2 cups (240 g) raw cashews
- 2 garlic cloves, minced (1 Tbsp or 6 g)
- 1/2 tsp garlic powder, plus more to taste
- 1 lemon, zested
- 2 lemons, juiced (1/4 cup or 60 ml)
- 3/4 cup (180 ml) kombucha
- 2 Tbsp (6 g) nutritional yeast
- 1/2 tsp sea salt
- 2 Tbsp (30 ml) olive oil
- 2 Tbsp (8 g) finely minced fresh dill

- 1/3 cup raw cashews (or soy milk)

Preheat the oven to 350°F (180°C)
- 50 cloves of organic garlic (5 garlic bulbs) cleaned and peeled
- 2 tablespoons of olive oil

- 2 large bulbs of red onion, diced
- 1 tablespoon fresh cut thyme
- 6 cups (250ml) of Not Chik'n broth
- fresh or dried herbs for taste (parsley, bay leaves, whatever you prefer!)

Preheat oven to 400 degrees F
- 1 lb string beans, trimmed and washed
- 2 tbsp no salt added vegetable stock
- 1 tbsp rosemary
- 1 tsp date syrup or pure maple syrup
- 1 1/2 tsp nutritional yeast
- 1 small garlic clove, minced
- 1 tsp healthy oil like avocado (optional)

Prep Wash cauliflower and chop into smaller florets
- 1 cup uncooked quinoa (red or white)
- 2 cups vegetable broth or water (or a mix of the two)
- 3 large sweet potatoes
- olive oil
- 1/2 head of cauliflower
- 2 chipotle peppers (canned, in adobo sauce)
- 1 Tablespoon adobo sauce from can
- 1 Tablespoon white wine vinegar
- 1 teaspoon sea salt
- 1 teaspoon black pepper

- 1/4 cup agave nectar or other liquid sweetener such as raw honey or maple syrup
- OR for zero calorie sweetener, use 3 drops of liquid Stevia
- 1/2 tablespoon natural peppermint extract
- RAW CHOCOLATE TOPPING INGREDIENTS :
- 2 tablespoons coconut oil
- 2 tablespoons cacao powder
- 2 tablespoons agave nectar or maple syrup

Using a hand blender or in a regular blender, combine all ingredients(starting with 1 date or 1/2 tsp agave nectar)...
- 1/4 cup raw cashews (or raw sunflower seeds)
- 1/8 cup raw sesame seeds (or raw pine nuts) or 2 tbsp tahini
- 1/8-1/4 cup sunflower seeds (depending how thick you want it)
- 3-4 tbsp freshly squeezed lemon juice
- 1-2 medium cloves garlic, chopped
- 1 1/2 tsp mild miso (I use Genmai soy and brown rice miso)
- 1/4 tsp kelp granules or other seaweed seasoning *optional
- 1/2 tsp of dried dill
- 2 dates or 1-2 tsp agave or other liquid sweetener
- 1/2-2/3 cup filtered water (to thin as desired)
- freshly ground black pepper to taste
