  • 6 cups vegetable broth
  • 1 teaspoon thyme (it was too dark to see the tiny thyme to cut on the balcony, so I cut some rosemary)
  • 1/4 teaspoon rubbed sage
  • 1 teaspoon dry mustard (I used all the stoneground wet mustard I had...1 tsp +)
  • 1 teaspoon mild horseradish (I used wasabi)
  • 1 tablespoon red wine vinegar
  • salt and freshly ground pepper, to taste
  • 6-8 ounces vegetarian "beef" or seitan
