Instructions PREP: Start smushing the tofu in that nifty TOFU PRESS
- 1 tablespoon oil
- 1 onion, chopped
- 3 cloves garlic, smashed
- 1 knob of ginger, peeled and grated
- 1-2 tablespoons red curry paste
- 1-2 tablespoons turmeric
- 1 teaspoon salt
- 2 tablespoons sugar
- 12 baby yukon potatoes
- 2 14-ounce cans coconut milk
- 3 cups vegetable broth
- 24 ounces extra firm tofu

Vegan Banana Bread

Combine the non dairy milk and apple cider vinegar; set aside
- 1/4 cup Non Dairy Milk (I used soy)
- 1 teaspoon Apple Cider Vinegar
- 2 cups organic whole wheat pastry Flour
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 teaspoon ground cinnamon or freshly ground allspice
- 1/4 cup Coconut Oil
- 1/2 stick of Earth Balance buttery bar (or use all coconut oil, 1/2 cup)
- 1/2 cup Brown Sugar
- 1/2 cup raw Sugar (or use all raw sugar)
- 3 Bananas, medium sized, mashed well
- 1 teaspoon Vanilla Extract

Bring the water to a boil in a medium sized saucepan
- 2 cups water
- 1 cup chickpea flour
- 2 Tbs. safflower oil, divided
- 1 tsp. Kosher salt
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. paprika
- 1/2 tsp. oregano
- 1/4 tsp. cayenne pepper
- Oil or cooking spray for pan

- For the cupcakes:
- 3 cups all-purpose flour
- 2 cups sugar
- 2/3 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 2/3 cups water or cold freshly brewed coffee
- 1 cup neutral oil, such as canola
- 2 teaspoons pure vanilla extract
- 1 tablespoon orange juice
- 2 tablespoons freshly grated ginger
- 4 tablespoons zested orange peel
- 4 tablespoons cider vinegar
- For the frosting:
- 1 cup vegan margarine, softened and at room temperature
- 4 cups powdered sugar
- 1/2 cup plus 2 tablespoons cocoa powder
- 1/4 cup soy milk
- 1 tablespoon vanilla
- 1 tablespoon orange juice
- 1/8 teaspoon salt

- 1/2 avocado, more if you prefer
- 1 small roma tomato, diced
- 1 green onion, sliced
- 2 tsp. nutritional yeast

Preheat the oven to 350 degrees F
- 1/2 cup vegan butter at room temperature (earth balance buttery sticks or homemade: Bryanna Clark Grogan, Miyoko Schinner and veganbaking.com have good recipes for homemade vegan butter)
- 1/2 cup packed organic brown sugar
- 1/4 cup organic unrefined granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 3 tablespoons chickpea brine (from a can of chickpeas, or the liquid from any other can of white beans)
- 1 cup plus 2 tablespoons organic all purpose unbleached flour (or whole wheat pastry flour, for GF use all purpose flour GF flour plus 1 teaspoon xanthan gum)
- 1 to 1 1/2 cups vegan chocolate chips (I like 1 1/2 cups)
