Ingredients

  • 5-6 ripe tomatoes, chunked
  • 1/2 cup fresh basil leaves (prune those suckers and make this salad)
  • 2 T balsamic vinegar
  • 2 T olive oil
  • Himalayan pink salt
  • Ground black pepper and dried papaya seeds (I mix them in my pepper mill)
  • cubed, baked tofu, coated in olive oil, smoked paprika and seasalt, 15 minutes per side at 425 F (30 mins total)

Step 1

throw the fresh veggies and herbs and seasonings in a bowl while the tofu is baking. then add the tofu (voila!)
(it's ok to drink the juice left on your plate!)
