Stuffed Peppers with Ground Beef and Rice

Directions for stuffed peppers with ground beef and rice Cut tops off peppers; remove seeds and membranes
- 6 green bell peppers
- 1 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 1 clove garlic, crushed
- 1 teaspoon dried leaf oregano
- 1/2 teaspoon dried leaf basil
- 2 teaspoons salt, divided
- 1/2 teaspoon ground black pepper, divided
- 1 egg, lightly beaten
- 1 1/2 teaspoons Worcestershire sauce
- 1 1/2 pounds lean ground beef or chuck
- 1 1/2 cups cooked long-grain rice
- shredded mild Cheddar cheese, about 1/2 to 3/4 cup, optional
Cheesy Skillet Meatballs with Garlic Toast

Set the oven to 350F Crack the egg into a large mixing bowl and beat well with a fork
- 1 lb ground beef
- 1 large egg
- 1/2 cup breadcrumbs
- a small red onion, finely minced (about 1/2 cup)
- 1 tsp onion salt
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp fresh cracked black pepper
- 1 heaping Tbsp ketchup (I used my favorite Jalapeno Ketchup)
- 1 heaping Tbsp A1 sauce
- 16 oz jar of your favorite tomato sauce
- 2 cups shredded mozzarella cheese (a little more if you like things really cheesy)
- Garlic Toasts
- 1 baguette
- olive oil for brushing
- several garlic cloves, sliced lengthwise (don't peel)

Heat oven to 400 degrees & grease 12 muffin cups
- 1 egg
- 1 c. milk
- 1/4 c. oil
- 2 c. flour
- 1/4 c. sugar
- 3 t. baking powder
- 1 t. salt
Cabbage Pack

- 1/2 head of green cabbage
- 1 small onion, sliced
- 2 T. butter
- Salt, pepper & paprika, to taste
- 1/4 c. precooked bacon, diced

Chicken with Mushroom Sauce

Heat a large nonstick skillet over medium-high heat
- 4 skinless, boneless chicken breasts (thin cutlets)
- 2 t. canola oil
- 1/2 t. salt, divided
- 1/4 t. pepper
- 1/4 cup chopped shallots
- 1 (8-oz) package sliced mushrooms
- 2 minced garlic cloves
- 1/2 cup dry white wine
- 1 1/2 t. flour
- 3/4 cup chicken broth
- 2 T. butter
- 1 t. fresh thyme, minced
Crumb-Topped Baked Fish

Place fillets on a greased baking sheet; season with salt and pepper
- 4 haddock or cod fillets (6 ounces each)
- Salt and pepper to taste
- 1-1/4 cups seasoned bread crumbs
- 1/4 cup shredded cheddar cheese
- 1/4 cup butter, melted
- 1 tablespoon minced fresh parsley
- 1/2 teaspoon dried marjoram
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried rosemary, crushed

Saute onion & celery in butter, then cool completely
- 3 T. butter
- 1 c. onion, diced
- 1/2 c. celery, diced
- 2 c. cooked chicken, chopped
- 1 1/2 c. bread crumbs
- flour for dredging
- 1 T. fresh sage
- 1 T. fresh thyme
- 1 1/2 t. salt
- 1/2 t. pepper
- 4 eggs, beaten
- 4 T. olive oil
Beef & Cheese Empanadas

Brown ground beef and onion in the olive oil
- 1 lb browned ground beef
- 1/2 medium onion, diced
- 2 Tbsp olive oil
- 1/2 green bell pepper, diced
- 3 garlic cloves, crushed
- 1/8 cup fresh cilantro, chopped
- 1/8 cup green olives, sliced
- 1 tsp oregano
- 1-1/2 tsp cumin
- 1 Tbsp tomato paste
- 1/4-1/2 jalapeño, minced (optional)
- 1 cup combination Monterey Jack and cheddar cheese, shredded
- 1 box pie dough
- 1 cup vegetable oil for frying
- Salt and pepper to taste

For the steaks: To a large bowl, whisk together buttermilk, eggs, hot sauce and worcheshire sauce
- GRAVY:
- 4 cube steaks
- 2 cups buttermilk
- 3 large eggs
- 2 teaspoons hot sauce
- 1 teaspoon worcheshire sauce
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 3/4 teaspoon cayenne
- 4-5 cups oil for frying
- 1/4 cup finely chopped shallots or onions
- 1 teaspoon minced garlic
- 3 tablespoons all-purpose flour
- 1/2 cup milk
- 1 1/2 cups chicken or beef stock
- pinch of cayenne
- salt and pepper to taste
- Optional: Ground pepper and parsley for garnish
