Mini Cranberry Apple Pies {RECIPE}

Start by preparing the dough for the pie crust
- Crust
- 2 1/2 cups of flour
- 2 teaspoons of sugar
- 1 cup butter (2 sticks)
- 1/2 teaspoon of salt
- 1/2 cup cold water
- Filling
- 2 cups cranberries
- 1/2 cup sugar
- 2 apples
- Zest from one orange (about 2 teaspoons)
- Assembly
- 1 large egg
- 1 tablespoon water
- Coarse sugar
PASTRY CREAM

Sprinkle gelatin over water in small bowl and let sit until gelatin softens, about 5 minutes
- 2 2 2 teaspoons unflavored gelatin
- 1/4 1/4 1/4 cup water
- 3/4 3/4 3/4 cup whole milk
- 3/4 3/4 3/4 cup heavy cream
- 5 5 5 large egg yolks
- 1/3 1/3 1/3 cup (2 1/3 ounces) sugar
- 3 3 3 tablespoons all-purpose flour
- 3 3 3 tablespoons unsalted butter , cut into 3 pieces and chilled
- 1 1/2 1 1/2 1/2 teaspoons vanilla extract
- 1 1 1 cup heavy cream , chilled
- Confectioners' sugar

- Dough Block (Détrempe)
- 1/2 cup (4 ounces) warm whole milk (110° to 115° F)
- 1 teaspoon, plus 2 tablespoons (1 ounce), sugar
- 4 teaspoons active dry yeast, or 1 tablespoon instant yeast
- 2 cold large eggs
- 3/4 cup (6 ounces) cold whole milk
