White Bean Soup with Ham and Rosemary

Soak beans 8 hours or longer in cold water, drain and rinse well
- 2 cups dry white beans (soaked 8 hours or overnight, then drained)
- 2 quarts chicken stock (or 2 quarts water with 2 T chicken stock base.
- 1 tsp. dried thyme
- 1-2 cups finely chopped celery
- 1 cup finely chopped carrots
- 1 cup finely chopped onion
- 2 cups finely chopped ham
- 1 envelope Goya brand ham flavor base (optional)
- 2 About 2 additional cups water
- 1-2 T finely chopped fresh rosemary (or less if you're not that crazy about the flavor of rosemary. You could use dried rosemary if you grind it.)
- 2-3 T finely chopped fresh parsley (or use 1 T dried parsley)
- Fresh ground black pepper to taste
White Bean and Roasted Mushroom Soup

Preheat oven to 450°F. Toss mushrooms, garlic and onion in olive oil, 1 teaspoon salt, and 1 teaspoon pepper
- 16 oz. mushrooms, halved or quartered
- 2 large sweet onions, quartered
- 3 garlic cloves, slightly crushed
- 1-2 tablespoons olive oil
- 1 1/2 teaspoon salt, divided
- 1 1/2 teaspoon pepper, divided
- 8-10 fresh sage leaves*
- 8-10 stems + 1 tablespoon leaves fresh thyme*, divided
- 48 oz. chicken broth (vegetable broth can be substituted for a vegetarian version)
- 3 - 15 oz. cans white beans, not drained (I prefer cannellini beans)
- Additional salt and pepper for seasoning
Chocolate Cherry Cream Cheese Danish

These danishes can be made into 2 large danishes as well, rather than 12 individual ones
- 1 Pkg. Frozen Puff Pastry, thawed(2 sheets, 17.3 oz.)
- 1 recipe Cherry Filling
- 1/3 C. Nutella
- 8 oz. Cream Cheese, softened
- 2/3 C. Powdered Sugar
- 1 t. Lemon Juice
- 1/2 t. Vanilla
- 1/2 t. Almond Extract
- 1 Egg
- 1 T. Water

- 3 cups white sugar
- 1 cup butter, softened
- 6 eggs, beaten
- 3 cups all-purpose flour
