  • 1 to 1 1/2 lbs ground beef – I like the extra lean, you could substitute ground turkey or chicken as well.
  • 1 white onion chopped
  • Drizzle of Olive oil
  • 4 Tbls butter
  • 4 rounded Tbls white flour
  • 1 tsp. Tony Chachere’s Seasoning.
  • 1 1/2 cup milk
  • Chicken broth – approximately 2 – 3 cups.
  • 1 pkg rotini, cooked and drained (I like the Bertolli brand – but use your favorite)

This was dinner last night

  • For the Mojo Sauce -
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 Tbls orange juice
  • 4 garlic cloves
  • 2 Tbls water
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • Hand full of fresh cilantro
  • 1 flank steak
  • 1 avocado, chopped
  • 1 tomato, chopped
  • 4 Tbls finely chopped red onion

I've adapted this from the Cooking Light 2009 cookbook

  • 2 tsp olive oil
  • White onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 5 tsp green Tabasco sauce ( or to taste)
  • 1/2 tsp salt
  • 1 1/4 lb boneless skinless chicken breast
  • 2 Tbls cornmeal
  • 2 cans Cannellini beans, rinsed and drained (15 oz size)

There is a fabulous restaurant in Portland called Mother’s

  • Filling Ingredients:
  • 1 pound uncooked spaghetti
  • 1 pound ground sirloin
  • 1/2 cup finely chopped onion
  • 3 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1 – 15oz can tomato sauce
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp black pepper
  • White Sauce Ingredients:
  • 3 Tbls all purpose flour
  • 1/2 tsp salt
  • 3 cups 2% reduced fat milk
  • 2 large eggs, lightly beaten
  • 2 large egg whites, lightly beaten
  • 5 Tbls white cheddar cheese ( I believe I used jack cheese the last time I made this)
  • Cooking spray
  • 1/4 cup grated pecorino Romano cheese

  • 2 Tbls. Extra Virgin Olive Oil
