A tasty soup that mirrors the taste of delicious Chicken Parmesan

  • For Chicken Parmesan:
  • 1 1/2 lbs chicken tenders, cut into bite sized pieces (or you could use chicken breasts)
  • 1 cup Italian Style bread crumbs
  • 1/2 tsp garlic powder
  • 3 Tbls shredded parmesan cheese
  • Olive oil for frying the chicken
  • For Soup:
  • 1 white onion, finely chopped
  • 3 cloves of garlic, minced
  • 1/4 cup red wine
  • 3 – 28 oz cans of whole peeled tomatoes
  • 1 – 28 oz can of chicken broth
  • 1 – 15 oz can of tomato sauce
  • 1 Tbls of oregano
  • Handful of fresh basil leaves, chopped
  • 2 tsp sugar
  • Parmesan Cheese for garnish

Here's an easy recipe for a fresh salsa that will knock your socks off

  • 1 - 15 oz can diced tomatoes
  • 1/2 white onion finely chopped
  • 1 can Herdez green salsa
  • Handful of chopped fresh cilantro
  • 2 garlic cloves, finely minced
  • 1/2 of a fresh jalapeno – depending upon how spicy you like the salsa – remove the seeds if you like it less spicy, use even less of the jalapeno (or none) if you don’t like spicy
  • 1 tsp cumin
  • 1/2 tsp salt
  • 2 tsp lemon juice

This is a wonderful recipe from the Cooking Light Cookbook – 2004 version

  • 2 cups 2% milk
  • 1 cup shredded Cheddar cheese
  • 1/2 cup chopped green onion
  • 1/2 tsp dry mustard
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 8 large egg whites*
  • 4 whole eggs*
  • 14 oz. meatless fat free sausage, crumbled (I use “Gimme Lean” brand)*
  • 4 slices of white bread, cubed
  • Cooking spray
