Basic Risotto

We love rice. I think I could live on rice

  • 1 Tbls. butter
  • 1 Tbls. Olive oil
  • 1 cup Arborio rice
  • 2 garlic cloves, minced
  • 1 shallot, minced
  • 2 Tbls. fresh flat leaf parsley, chopped
  • 3 cups chicken stock – heated (I used Wolfgang Puck)
  • 4 Tbls fresh parmesan cheese
  • Salt and Pepper to taste
  • Suggested optional items to add –mushrooms, zucchini, dash of cayenne pepper, peas. I would sauté whatever vegetables you want to add, and add them to rice with the last bit of chicken stock. You coul
  • For a lemon risotto, you could grate some lemon zest, and replace some of the chicken stock with fresh lemon juice. In this case I might replace the parsley with some fresh basil.

  • 2 Tbls. white onion, finely diced

  • Chicken Ingredients:
  • 1 Tbls olive oil
  • 1 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground black pepper
  • 4 boneless skinless chicken breast halves (The last time I made this I didn’t have chicken breasts on hand, so I used six boneless skinless chicken thighs)
  • Salad Ingredients:
  • 2 cups cherry tomatoes, halved
  • 1/4 cup sliced green onion tops
  • 2 Tbls thinly sliced basil
  • 1 Tbls balsamic vinegar
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 7 oz can whole kernel corn, drained and rinsed

  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1/3 cup brown sugar
  • 2 crushed garlic cloves
  • 2 Tbls lemon juice
  • 3 Tbls soy sauce
  • 1 pkg Pork Tenderloins (usually yields two pieces of pork)

The idea and name came from the FlatBelly Diet cookbook, but I’ve seriously changed the recipe

  • 1 Whole Wheat English Muffin, sliced and toasted
  • 2 slices of bacon, I used turkey bacon
  • Several spinach leaves
  • 2 large slices of tomato
  • 2 Tbls of Olive Tapenade, my recipe is posted on this site.
  • A little salt and pepper if desired, however the saltiness of the olive tapenade and bacon will probably be sufficient for most.
