Salsa Chicken

Beyond “chicken” I didn’t have a clue what I was going to make for dinner tonight
- 4 boneless skinless chicken breasts, rinsed and patted dry
- 1 onion, chopped
- 1 bunch cilantro, chopped
- 2 cans diced tomatoes
- 1 garlic clove, minced
- Olive Oil
- Chili Powder
- Salt and Pepper
- Cayenne Pepper
St. Patrick's Day Feast

- Corned beef
- Head of green cabbage
- Carrots, steamed and tossed with butter and salt
- Red potatoes, mashed with garlic cloves, butter and milk
Basic Risotto

We love rice. I think I could live on rice
- 1 Tbls. butter
- 1 Tbls. Olive oil
- 1 cup Arborio rice
- 2 garlic cloves, minced
- 1 shallot, minced
- 2 Tbls. fresh flat leaf parsley, chopped
- 3 cups chicken stock – heated (I used Wolfgang Puck)
- 4 Tbls fresh parmesan cheese
- Salt and Pepper to taste
- Suggested optional items to add –mushrooms, zucchini, dash of cayenne pepper, peas. I would sauté whatever vegetables you want to add, and add them to rice with the last bit of chicken stock. You coul
- For a lemon risotto, you could grate some lemon zest, and replace some of the chicken stock with fresh lemon juice. In this case I might replace the parsley with some fresh basil.
Curried Chicken Salad

You could also add dried cranberries or raisins if you’d like
- Large can of chicken (12.5 oz)
- 2 celery ribs, finely diced
- 2 Tbls. white onion, finely diced
- 4 heaping teaspoons mayonnaise (silverware spoons, not measuring spoons)
- 2 tsp. curry powder
- Salt & Pepper to taste
Spinach Pie

- Nonstick cooking spray
- 1 pkg (10 oz) frozen chopped spinach, thawed
- 1 medium onion, thinly sliced
- 1 medium carrot, peeled and grated
- 1 cup chicken broth
- 1/4 tsp dried marjoram, crumbled
- 2 egg whites
- 1 whole egg
- 1 cup skim milk
- 1 cup shredded Swiss cheese
- 1/4 tsp black pepper
Coriander Chicken with Tomato Corn Salad

Another of my favorites from the Cooking Light collection
- Chicken Ingredients:
- 1 Tbls olive oil
- 1 1/2 tsp ground coriander
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/4 tsp chili powder
- 1/8 tsp ground cinnamon
- 1/8 tsp ground black pepper
- 4 boneless skinless chicken breast halves (The last time I made this I didn’t have chicken breasts on hand, so I used six boneless skinless chicken thighs)
- Salad Ingredients:
- 2 cups cherry tomatoes, halved
- 1/4 cup sliced green onion tops
- 2 Tbls thinly sliced basil
- 1 Tbls balsamic vinegar
- 1 tsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 7 oz can whole kernel corn, drained and rinsed
Olive Tapenade

I serve this on crostini, crackers, or as a spread on some sandwiches
- 20 Kalamata Olives
- 12 small green olives stuffed with pimiento
- 2 tsp capers
- 2 tsp olive oil
- 1/2 tsp oregano
Barbequed Pork Tenderloins with Soy Orange Glaze

We really enjoy Pork Tenderloins
- For Marinade:
- 1/4 cup olive oil
- 1/4 cup orange juice
- 1/3 cup brown sugar
- 2 crushed garlic cloves
- 2 Tbls lemon juice
- 3 Tbls soy sauce
- 1 pkg Pork Tenderloins (usually yields two pieces of pork)
Mediterranean BLT

The idea and name came from the FlatBelly Diet cookbook, but I’ve seriously changed the recipe
- 1 Whole Wheat English Muffin, sliced and toasted
- 2 slices of bacon, I used turkey bacon
- Several spinach leaves
- 2 large slices of tomato
- 2 Tbls of Olive Tapenade, my recipe is posted on this site.
- A little salt and pepper if desired, however the saltiness of the olive tapenade and bacon will probably be sufficient for most.
