English Muffin Bread GF

After just about 35 minutes in the oven, you’ll have an amazing loaf of soft and tender gluten free bread
- 3 cups (420 g) Gluten-Free Bread Flour, plus more for sprinkling*
- 1 2/3 teaspoons (5 g) instant yeast
- 1 tablespoon (12 g) sugar
- 1 1/2 teaspoons (9 g) kosher salt
- 1 2/3 cups warm milk (110°F)
- Coarsely ground gluten free cornmeal, for sprinkling (optional)
- GLUTEN FREE BREAD FLOUR
- (Makes 1 cup (140 g) flour)
- 100 grams (about 11 1/2 tablespoons) mock Better Batter or Better Batter itself (71% of the total blend)
- 25 grams (about 5 tablespoons) unflavored whey protein isolate (18% of the total blend) (Isopure brand or NOW Foods brand are what I use)
- 15 grams (about 5 teaspoons) Expandex modified tapioca starch (11% of the total blend)**

- 160 grams superfine brown rice flour
- 160 grams superfine white rice flour
- 80 grams tapioca starch/flour
- 80 grams potato starch
- 20 grams potato flour
- 18 grams xanthan gum
- 8 grams pure powdered pectin
Seafood Lasagna

- 1 clove garlic, minced
- 1 pound baby portobello mushrooms, sliced

- 1 pound bay scallops (reviewers said they added no flavor)
- 1 pound imitation crabmeat, chopped (consider using fresh not imitation)
- 20 ounces ricotta cheese
- 1 egg

- 2 eggs (or substitute)
- 1/2 cup vegetable or liquid coconut oil
- 1/3 cup water
- 1 1/4 cups sugar

- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt

- 1 cup dry white wine
- 5 cups Chicken Stock or canned low-sodium broth
- Salt and freshly ground pepper
- One 1-pound loaf of peasant bread, cut into 1/2-inch dice and toasted until dry
- 2 cups heavy cream
- 1/4 cup finely chopped fresh flat-leaf parsley
- 3 large eggs, beaten

1. Combine self-rising flour and sugar in a large bowl; make a well in center of mixture
- 2 cups self-rising flour
- 2 Tbs sugar
- 1 large egg
- 1 1/2 to 2 cups milk
- 1 (3-ounce) package cream cheese, softened low fat
- 1 Tbs butter or margarine, melted
- 1/2 tsp vanilla extract
- Servings: 6
- Yield: 12 pancakes.

General Tso's Instant Pot Shredded Chicken

Sauté Garlic and Ginger: Heat up your pressure cooker (Instant Pot: press Sauté button)
- General Tso's Sauce:
- 8 - 10 (roughly 2 pounds) chicken drumsticks
- 1 tablespoon (15ml) peanut oil
- 10 dried Chinese red chili
- 3 garlic cloves, minced
- 1 -2 stalks green onion, green part finely chopped for garnish, white part cut into 1.5-inch pieces
- 1 (10g) slice ginger, roughly chopped
- Optional: 1 tablespoon (15ml) honey
- 1/4 cup (63ml) dark soy sauce
