Cranberry Chocolate Chip Cookies

Here is another recipe that I can't remember where I got it
- 2 1/2 cups flour
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar (I did use Splenda)
- 1/2 cup brown sugar
- 2 sticks softened butter
- 2 large eggs
- 1/2 tsp almond extract
- 1 cup dried cranberries (can also use dried blueberries)
- 1 1/2 cups semisweet chocolate chips or chocolate chunks
- 1 cup chopped nuts
- Servings: 48
- Author Notes
- Number of cookies was not provided. I chose 48 just to get it to come up with a calorie count.
Shortbread Caramel Brownie Bars

1. Cut 1 cup butter into chunks
- 1 1/2 cups (3/4 lb.) butter
- 2 1/2 cups all-purpose flour
- 1 1/4 cups sugar
- 2 Tbs cornstarch
- 12 oz individually wrapped soft caramels, such as Kraft
- 1/4 cup whole milk
- 10 oz bittersweet or semisweet chocolate, finely chopped
- 3 large eggs
- 1 Tbs vanilla
- 1/2 tsp baking powder
- 1/4 tsp salt
- Servings: 24

Blueberry Buttermilk Bars GF

I've tweaked this by subbing Jules GF Flour for regular
- FOR THE CRUST
- 3/4 cup (102 grams) GF Jules all-purpose flour
- 1/3 cup (67 grams) sugar
- 1/4 cup (33 grams) cornmeal (not coarse)
- 2 tablespoons cornstarch
- 1/4 teaspoon fine sea salt
- 1 stick (8 tablespoons; 4 ounces; 113 grams) cold unsalted butter, cut into 8 pieces
- FOR THE TOPPING
- 1 1/2 tablespoons cornstarch
- 1 1/2 cups (360 ml) buttermilk
- 4 large eggs, at room temperature
- 1/2 cup (100 grams) sugar
- Pinch of fine sea salt
- 2 teaspoons pure vanilla extract
- 2 tablespoons (1 ounce; 30 grams) unsalted butter, melted and cooled
- 1 cup (150 grams) fresh blueberries
Chocolate Banana Bread GF

Preheat your oven to 350°F
- 3 ounces unsweetened chocolate, chopped
- 5 tablespoons (70 g) unsalted butter, chopped
- 2 ripe bananas (200 g), mashed very well (from about 2 medium bananas)
- 3/4 cup (150 g) granulated sugar
- 1/3 cup (85 g) sour cream, at room temperature
- 1 teaspoon pure vanilla extract
- 1 egg (50 g, weighed out of shell), at room temperature
- 1/4 cup + 2 tablespoons (30 g) unsweetened natural cocoa powder
- 1 3/4 cups (245 g) all purpose gluten free flour (I used Better Batter)
- 3/4 teaspoon xanthan gum (omit if your blend already contains it)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 4 ounces semi-sweet chocolate chips, tossed with 1/2 teaspoon cornstarch
- 1/2 ripe banana, chopped (about 1/4 cup), optional
Pound Cake GF

- 3/4 cup P.A.N. Pre-cooked White Corn Meal
- 3/4 cup brown rice flour
- 1/2 cup invert sugar
- 2/3 cup white sugar
- 1 cup unsalted butter, room temperature
- 1/3 teaspoon salt
- 4 eggs
- 1 1/3 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 cup natural yogurt, sugar free
Pecan Tassies

- 2 2 2 cups water
- 1 1 1 cup quinoa
- 2 2 2 tablespoons canola oil or olive oil

- 1 1 1 cup sliced mushrooms

- 2 2 2 cups tomato sauce or prepared pasta sauce

- 1/2 teaspoon baking soda
- 2/3 cup (133 g) granulated sugar
- 8 tablespoons (112 g) unsalted butter, melted and cooled
- 2 eggs (120 g, out of shell) at room temperature, beaten
- 1 teaspoon pure vanilla extract
- 2/3 cup (150 g) sour cream, at room temperature
- 1 cup (200 g) ripe bananas, peeled and mashed lightly (from about 2 medium-size bananas)
