Feta Mushroom Spinach Quiche

Original recipe called for a pie crust
- 4 large eggs
- 1/4 c. reduced fat sour cream
- 1/4 c. skim milk
- 2 c. fresh mushrooms, sliced
- 2 tsp. garlic, minced
- 1 bag Fresh Express Baby Spinach
- 4 scallions
- 4 tsp. olive oil
- 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 1 c. of imitation crab/lobster meat chopped into relatively small pieces
- 1/2 c. feta cheese, finely crumbled
- 1 tbsp Parmesan cheese, grated

- Ingredients
- For the donuts
- 2 1/2 2 1/2 1/2 cups (350g) all-purpose gluten-free flour (I used Better Batter), plus more for sprinkling
- 1 1/2 1 1/2 1/2 teaspoons xanthan gum (omit if your blend already contains it)
- 1/2 1/2 1/2 teaspoon kosher salt
- 1/4 1/4 1/4 teaspoon cream of tartar
- 1/4 1/4 1/4 teaspoon baking soda
- 1/4 1/4 1/4 cup (50 g) granulated sugar
- 2 1/2 2 1/2 1/2 teaspoons (8 g) instant (breadmaker or rapid rise) yeast
- 1/2 1/2 1/2 teaspoon fresh finely-ground nutmeg (optional)
- 1 1 1 teaspoon apple cider vinegar
- 1 1 1 egg (50 g, weighed out of shell), plus 1 egg white (25 g)
- 1 1 2 cup + 2 tablespoons (9 fluid ounces) milk (any kind, just not nonfat), at room temperature
- 4 4 4 tablespoons (56g) unsalted butter or virgin coconut oil, melted and cooled
- Oil for frying or non-aerosol oil spray for Air Frying
- For the glaze
- 1 1 1 cup (120 g) confectioner’s sugar
- 2 2 2 tablespoons (42 g) Lyle’s Golden Syrup (or honey)
- 2 to 4 2 to 4 4 tablespoons water
Golden Honey-Glazed Chicken

Cheese and Leek Mini-Loaves, GF & FODMAP

This is a savory muffin that contains all the food groups and so is a balanced mini-meal in itself
- ¼ cup olive oil
- ¾ cup leek, the green part only, chopped finely
- ½ cup rice flour
- ¼ cup tapioca flour
- ¼ cup potato starch
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp black pepper
- 3 eggs
- 1 cup lactose-free yogurt
- 6oz/170gms feta cheese
- 4.6oz/130gms mozzarella
- ½ cup grated mature cheese
- 2 tbsp finely chopped parsley

- 2 medium carrots, cut into 3-inch julienne strips
- 1 Tbs. reserved cooking water
- 2 tablespoons mayonnaise
- 2 teaspoons grated onion
- 2 teaspoons prepared horseradish
- 1/8 teaspoon salt
- Dash pepper
- r tablespoons crushed butter-flavored crackers (GF Panko for GF recipe)

- Dash paprika
Creamy Green Enchiladas

I love enchiladas! These are full of vegetables in addition to the cheese and creamy sauce
- 12 ounces chicken breasts, cooked and diced
- 1 tablespoon smart balance butter
- 1 medium onion, about 1/2 cup, chopped
- 2 cups baby portabella mushrooms, sliced
- 1 jalapeno, seeded and minced
- 10 ounces (1 pound bag) baby spinach
- 1 teaspoon cumin seeds or 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/4 cup reduced-fat sour cream
- 2 tablespoons skim milk
- 4 (8 inch) whole-wheat tortillas
- 1/4 cup Monterrey Jack, shredded
- 1 can green chilies, chopped and drained
- Makes 4 enchiladas, one per serving.

Mix the Cobbler Mixture ingredients and spread into a greased 11×7 or 9×13 glass baking dish

- 1 cup self rising flour
- 2 Tablespoons cocoa
- 1/2 cup milk
- 6 Tablespoons melted butter
- 1 teaspoon vanilla
- Pinch of salt
- Top Mixture –
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup cocoa
