Roasted Radishes with Herbs

This recipe calls for parsley and dill
- 2 bunches medium sized Radishes (about 20), trimmed with 1/2 inch of stem left on, and halved.
- 1-2 Tbs Olive Oil
- 1/4 tsp. Salt
- 1/8 tsp. pepper
- 2 tsp Chopped Parsley
- 1 tsp. chopped fresh dill

1. Cream shortening and add sugars and beat
- 2/3 cup shortening (Crisco)
- 1/2 cup sugar
- 3/4 cup brown sugar - (packed)
- 2 eggs
- 1 teaspoon vanilla
- 1/4 cup water
- 1 cup pumpkin puree
- 2 1/2 cup flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 1/2 teaspoon pumpkin pie spice
- 3/4 cup raisins
- 3/4 cup chopped walnuts
- GLAZE
- 2 tablespoons soft butter
- 1 1/2 cups powdered sugar
- 2 tablespoons water

Baked Glazed Vanila Donuts GF

Vanilla Bean Pods? So Expensive! But then I finally got wise and started ordering vanilla beans in bulk online
- For the Donuts
- 1 1/2 cups (210 g) all purpose gluten free flour
- 3/4 teaspoon xanthan gum (omit if your blend already contains it)
- 1/4 cup (36 g) cornstarch (or try potato starch or arrowroot)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/2 teaspoon freshly grated nutmeg
- 3/4 cup (150 g) granulated sugar
- 4 tablespoons (56 g) unsalted butter, melted and cooled
- 4 tablespoons (48 g) nonhydrogenated vegetable shortening, melted and cooled (can be replaced with an equal amount of unsalted butter, by weight)
- 2 eggs (100 g, weighed out of shell) at room temperature, beaten
- 3/4 cup (193 g) plain yogurt, at room temperature
- 1 vanilla bean (can replace with 1 1/2 teaspoons pure vanilla extract)
- For the glaze
- 1 cup (115 g) confectioners’ sugar
- 2 to 4 teaspoons milk or buttermilk
Hummingbird Cake, GF

My Hummingbird Cake was a three-layer concoction, like the picture
- For the Cake
- 2 1/2 cups (350 g) all purpose gluten free flour (I used Better Batter)
- 1 1/4 teaspoons xanthan gum (omit if your blend already contains it)
- 1/2 cup (72 g) cornstarch (potato starch or arrowroot should work, too)
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 6 tablespoons (84 g) unsalted butter, at room temperature
- 6 tablespoons (84 g) vegetable oil
- 1 1/4 cups (250 g) granulated sugar
- 3 eggs (180 g, weighed out of shell) + 1 egg yolk (30 g) at room temperature, beaten
- 1 1/2 teaspoons pure vanilla extract
- 1/2 cup (100 g) mashed ripe bananas
- 1 8-ounce can crushed pineapple in its own juices (undrained)
- 2 cups (200 g) diced ripe (but not overripe) bananas
- 1 cup (120 g) chopped raw pecans
- For the Frosting
- 12 ounces cream cheese (1 1/2 8-ounce packages), at room temperature
- 12 tablespoons (168 g) unsalted butter, at room temperature
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 6 cups (690 g) confectioners’ sugar, plus more as necessary
- For Decorating
- 1/2 to 3/4 cup chopped raw pecans

Shrimp and Goat Cheese Grits with Roasted Red Pepper Sauce from the Tupelo Honey Cafe cookbook by Elizabeth Sims an
- Ingredients:
- 2 2 1 1/2 plus 1 1/2 tsp EVOO
- 1 1 1 pound large uncooked shrimp, peeled, deveined and tails removed
- 1 1 1 Tbsp minced garlic
- 1/2 1/2 1/2 cup thinly sliced roasted red bell pepper
- 2 2 2 1/2 1 2 1 1 sugar, 2 1/2 tsp sea salt, 1 Tbsp smoked paprika, 2 tsp cayenne pepper, 1 tsp freshly ground black pepper, 1 tsp white pepper) **I left out the sugar and white pepper.
- 1/4 1/4 1/4 cup dry white wine (i.e. Sauvignon Blanc)
- 3 3 3 Tbsp unsalted cold butter
- Goat Cheese Basil Grits (see recipe below)

- 3 3 3 cups water
- 1 1 1 tsp sea salt
- 1 1/4 1 1/4 1/4 cups quick-cooking grits
- 1 1 1 Tbsp unsalted butter
- 2 2 2 Tbsp cream (I left out)
- 4 4 4 ounces goat cheese
- 2 2 2 Tbsp chopped basil, or garnish (I doubled this amount)
Easy Gluten Free Oatmeal Muffins

- 2 3/4 cups (275 g) certified gluten free old-fashioned rolled oats
- 5/8 cup (50 g) unsweetened coconut flakes
- 1/4 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 3 tablespoons (30 g) coconut palm sugar (optional!)
- 5/8 cup (100 g) small dried fruit (I have used raisins, dried cranberries and diced dried apricots)
- 5 tablespoons (70 g) virgin coconut oil, melted and cooled
- 3 ripe bananas (300 g), mashed
