Ingredients

  • 35 oz. brown lentils
  • 7 oz. bacon
  • 35 oz. stewing beef
  • 2 onions
  • 2 carrots
  • 1 tomato, peeled and diced
  • 1/2 Chorizo sausage
  • 1 cup white wine
  • Oil for sauteing
  • Spices: cloves, by leaf, pepper

Preparation

Step 1

The night before, soak the lentils in water and the following day boiling water with a pince of salt over a moderate flame until soft. Keep aside a little of the water used for cooking.
In a fry pan seal the meat in a little oil , degrease and cut into cubes.
Boil the sliced carrots with a little sale until soft.

In a large pan add a little oil and lightly fry the bacon until browned. Add the chopped onion and fry till transparent. Add teh chopped tomato and continue cooking. Add the wine, spices, beef cubes and pre-cooked lentils and a little of the water in which they were cooked. Afterwards add the carrots and lastly the chorizo sausage. If the mixture requires a bit more liquid, you can add wine or water in which the lentils cooked. Leave the mixture to lightly simmer for 2-3 hours and stir occasionally.
