My Carolina Kitchen: Georgia Caprese Salad – a Peachy Southern Twist to an Italian Classic

Prepare the vinaigrette by combing the ingredients in a glass jar with a screw top lid
- Vinaigrette:
- Juice and zest of 1 lime
- 1 tablespoon champagne or white wine vinegar
- 4 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 tablespoon water
- 1/2 teaspoon salt
- Salad:
- 4 ounces tiny water-packed mozzarella cheese balls

- UP to 1-2 days ahead:
- Season two chicken breasts with kosher salt & pepper and sear in a pan with a little olive oil, for 3 minutes. Turn over and roast the pan of chicken, in the oven until fully cooked-- about 6 minutes.
- For the salad:
- 1/2 cup mayo
- 2 Tbsp White balsamic vinegar
- 1 Tbsp walnut oil
- 1 tsp grainy mustard
- handful walnuts, toasted
- 2 cups seedless grapes, cut in half

Classic Buttermilk Waffles

- 2 large eggs
- 1 3/4 cups buttermilk
- 1/2 cup (8-tablespoons) butter, melted and cooled to room temperature
- 2 teaspoons vanilla extract
- 2 cups pastry flour OR 1 3/4 cups King Arthur Unbleached All-Purpose Flour
- 2 tablespoons sugar*
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup pecan meal or almond flour, optional; for flavor
- Leave out the sugar if you want savory waffles, such as the type you'd use as a base for creamed chipped beef or fried chicken
