Buttermilk Biscuits

Preheat your oven to 450. Combine the dry ingredients in a bowl, or in the bowl of a food processor
- 2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1 tablespoon baking powder
- 1 teaspoon salt
- 6 tablespoons butter, very cold from the freezer
- 1 cup cold buttermilk
Baked French Toast Casserole with Praline Topping

Slice French bread into 20 slices, 1-inch each
- French Toast:
- 1 loaf French bread (13 to 16 ounces)
- 8 large eggs
- 2 cups half-and-half
- 1 cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Dash salt
- Praline Topping, recipe follows
- Maple syrup
- Praline Topping:
- 1/2 pound (2 sticks) butter
- 1 cup packed light brown sugar
- 1 cup chopped pecans
- 2 tablespoons light corn syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Chicken Caesar Salad Wrap

In large bowl, toss together lettuce, dressing,and cheese
- 1 can drained Chicken Breast-(13oz)
- 2 cups Romaine lettuce, torn
- 1/2 cup Caesar Salad Dressing or Ranch Dressing
- 1/3 cup Parmesan Cheese
- 4 Tortillas,large ones work best
Southwestern Black Bean Salad

In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper
- 15.5 oz can black beans, rinsed and drained
- 9 oz cooked corn, fresh or frozen (thawed if frozen)
- 1 medium tomato, chopped
- 1/3 cup red onion, chopped
- 1 scallion, chopped
- 1 1/2 - 2 limes, juice of
- 1 tbsp olive oil
- 2 tbsp fresh minced cilantro (or more to taste)
- salt and fresh pepper
- 1 medium avocado, diced
- 1 diced jalapeno (optional)
Lighter Broccoli Mac and Cheese

Preheat the oven to 375°F
- 1 1/2 cups whole-wheat elbow macaroni
- 2 cups small broccoli florets
- 1 cup reduced-fat cottage cheese
- 2 tablespoons whole-wheat bread crumbs
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 2 teaspoons + 1 tablespoon olive oil
- 1 1/2 tablespoons all-purpose flour
- 3/4 teaspoon dry mustard
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1 1/2 cups fat-free milk
- 1 cup shredded extra-sharp Cheddar cheese
- 2 tomatoes, diced
Easy Chili Go Rounds

In a small bowl, combine sausage, Parmesan cheese, cinnamon and thyme
- 1 cup finely chopped cooked smoked sausage
- 2 Tbls. bottled Chili sauce
- 1 Tbls. grated Parmesan cheese
- 1/4 tsp. ground cinnamon
- 1/4 tsp. dried thyme leaves (crushed)
- 1 package refrigerated crescent dinner rolls
Old Fashioned Baked Beans

Sort through the beans, discarding any that are discolored or damaged, and rinse them well
- 2 pounds (4 cups) pea (white navy) beans, or red kidney, pintos, Great Northern, or a mixed bean assortment
- Salt
- 2 large, or 3 medium onions, 1 trimmed, quartered and peeled, 2 trimmed, split, lengthwise, peeled, and chopped
- 1-2 cloves garlic, minced
- 1/2 cup unsulphured molasses
- 1/2 cup dark brown sugar
- 1 1/2 cups of tomato sauce or catsup
- 1 teaspoon dry mustard, or more, to taste
- 1-2 tablespoons Worcestershire sauce
- 1/2 pound thick sliced bacon

Crockpot Sweet & Sour Meatballs

1. In a crockpot, add chili sauce and grape jelly
- 10 oz chili sauce (one jar)
- 16 oz grape jelly (one jar)
- 2 lb frozen meatballs (we used Rosinas)
Dos Queso Dip

Preheat oven to 350 degrees In a medium bowl, blend sour cream and cream cheese until smooth
- 1 (16 ounce) container sour cream
- 1 (8 ounce) package cream cheese, softened
- 1 (1 ounce) package taco seasoning mix
- 2 cups shredded Pepper Jack cheese
- 1 cup salsa
- 1 teaspoon dried, crushed Mexican oregano
- salt and pepper to taste
